π 15-MINUTE "BURST" CHERRY TOMATO PASTA π

π₯ 1 Large pasta pot
π³ 1 Wide frying pan (with a lid)
π₯ 1 Large stirring spoon or wooden spatula
π§ͺ 1 Small mug (to save pasta water)
π§ͺ 1 Colander
π§€ 1 Oven mitt
π THE INGREDIENTS
π Pasta 250g (Spaghetti or Rigatoni work great)
π Cherry tomatoes 2 cups (approx. 300g, left whole)
π§ Onion 1/2 small (finely diced)
π§ Garlic 2 cloves (sliced thin)
π§ Parmesan cheese 1/2 cup (freshly grated)
π« Olive oil 3 tablespoons
πΏ Fresh parsley or basil 1 handful (torn or chopped)
π§ Salt & Black pepper 1 large pinch each
π¨βπ³ THE METHOD
1. The Pasta Foundation
π₯ Boil: Fill your Large pasta pot with water and a big palmful of salt. Bring to a rolling boil.
π Cook: Add the Pasta. Check the boxβcook it for 1 minute less than the instructions say (it should be "Al Dente").
2. The Sweet Tomato Base
π₯ Sweat: While the pasta boils, heat Olive oil in the Wide frying pan on Low heat. Add the Onion. Cook until it is soft and see-through (about 4 minutes).
π§ Garlic: Add the Garlic. Stir for 1 minuteβdon't let it turn brown or it will taste bitter!
π The Burst: Turn the heat to Medium. Throw in the whole Cherry tomatoes.
π₯ Cover: Put the lid on for 3β4 minutes. The steam will make the tomatoes "pop" and soften.
π₯ Crush: Take the lid off. Use the back of your Spoon to squish the softened tomatoes. They will release their sweet juices and turn into a chunky sauce.
3. The "Liquid Gold" Emulsion
π§ͺ Save the Water: Before draining the pasta, dip your Small mug into the pot and scoop out 1 cup of the cloudy Starchy pasta water.
π Combine: Drain the pasta and toss it directly into the tomato pan.
π§ The Creamy Trick: Add half of the Parmesan and a big splash of that Pasta water.
π Vigorously Stir: Use your Spoon to stir quickly. The starch in the water and the cheese will mix with the oil to create a shiny, creamy sauce that sticks to the noodles. Add more water if it looks too dry.
πΏ Finish: π Turn off the heat. Stir in the Herbs and Black pepper.
π‘οΈ SAFETY FIRST
π Tomato Splatter: When you "squish" the tomatoes, they can sometimes spray hot juice. Keep your face back and wear your Oven mitt to protect your hand.
π§€ Steamy Pour: When draining pasta, the steam rises fast. Pour the water into the sink slowly so the steam doesn't burn your arms.
π₯ Low Heat Onion: If the onion starts to turn brown or crispy, the heat is too high! Keep it low so the onion stays sweet and soft.
