This One-Pan Thai-Style Barbecue Chicken is a fantastic "fast-fuel" meal. By using Chicken Thighs, you get a higher iron content than breasts, which is excellent for energy. The combination of Turmeric and Ginger provides a powerful anti-inflammatory boost, while the Peanut Sauce adds healthy fats and protein to keep you full.

๐ณ 1 Large frying pan or Skillet
๐ฅฃ 2 Small bowls (one for spices, one for sauce)
๐ฅ 1 Large stirring spoon or Tongs
๐น 1 Cutting board & Knife
๐งค 1 Oven mitt
๐ THE INGREDIENTS
The Spiced Chicken
๐ Halal Chicken Thighs 1 lb (boneless, sliced into strips)
๐ก Spices: 1/2 tsp each of Turmeric, Cumin, Coriander, Paprika
๐ง Aromatics: 1 tsp Ginger paste, 1 tsp Garlic paste
๐บ Cooking Oil 2 tablespoons
The 1-Minute Peanut Sauce
๐ฅ Peanut Butter 3 tablespoons (Smooth)
๐ค Brown Sugar 1 tablespoon
๐ถ Soy Sauce 1 tablespoon (Halal-certified)
๐ Lime Juice 1/2 lime (freshly squeezed)
๐ง Warm Water 2 tablespoons (to thin the sauce)
๐จโ๐ณ THE METHOD
๐ฅฃ In a Small bowl, mix the Turmeric, Cumin, Coriander, Paprika, Ginger, and Garlic.
๐ฅฉ Toss the Chicken Thigh strips in the spices until they are bright yellow and orange.
๐ฅ Put your Frying pan on the stove and turn the heat to Medium-High. Add the Oil.
๐ Use your Oven mitt to hold the pan. Place the chicken in the hot oil.
โฒ๏ธ Cook for 8 to 10 Minutes. Let them sit for a minute before flipping so they get Lightly Charred and crispy on the edges.
๐ฅ While the chicken cooks, whisk the Peanut Butter, Brown Sugar, Soy Sauce, Lime Juice, and Warm Water in a Small bowl until smooth.
๐ถ Once the chicken is cooked through, pour the Peanut Sauce directly into the pan.
๐ฅ Stir for 1 Minute just to warm the sauce through and coat the chicken.
๐ Turn the stove dial to the Off position.
๐ก๏ธ SAFETY FIRST
๐ Crowding the Pan: Don't put too much chicken in at once. If the pan is too full, the chicken will steam instead of getting that nice Barbecue Char.
๐ฅ Sauce Thickness: If the sauce looks too thick or "clumpy," add one more tablespoon of Warm Water and stir quickly.
๐ Lime Safety: When squeezing the Lime, turn it face-down into your hand so the seeds don't fall into the pan.
๐ Check the Dials: Ensure the stove is Off as soon as you finish, as peanut butter can burn quickly if left on a hot burner.
