Trinidadian-style Beef Oil Down or Ground Provision Soup. It is one of the most balanced "one-pot" meals you can make, especially for someone looking for energy and muscle recovery.

๐Ÿ›’ THE INGREDIENTS

The Beef & Base

  • ๐Ÿฅฉ Halal Stew Beef 2 lbs (cubed)

  • ๐Ÿง„ Green Seasoning 2 tbsp (Mashed culantro, garlic, ginger, thyme)

  • ๐Ÿบ Cooking Oil 2 tablespoons

  • ๐ŸคŽ Brown Sugar 1 tablespoon (for "browning" the meat)

  • ๐Ÿฅฅ Coconut Milk 1 can (13.5 oz)

  • ๐Ÿ— Beef Broth 4 cups (Low-sodium/Halal)

The Provisions (Vegetables)

  • ๐ŸŽƒ Pumpkin 1 cup (chopped)

  • ๐Ÿฅ• Carrots 2 (sliced)

  • ๐Ÿ  Sweet Potato & Cassava 1 cup each (peeled/cubed)

  • ๐ŸŒ Green Fig (Green Banana) 2 (peeled/sliced)

  • ๐Ÿฅ’ Okra 6 to 8 pieces

  • ๐ŸŒถ๏ธ Whole Hot Pepper 1 (Scotch Bonnet or Habanero)

The Finish

  • ๐ŸŒฝ Corn on the Cob 2 ears (cut into small rounds)

  • ๐ŸฅŸ Flour Dumplings (Simple flour/water/salt dough rolled into "spinners")

  • ๐ŸŒฟ Fresh Herbs (Parsley and Culantro)


๐Ÿ‘จโ€๐Ÿณ THE METHOD

Step 1: The Browning

  1. ๐Ÿฅฉ Place the Beef in a Small bowl with the green seasoning. Let it sit for 20 Minutes.

  2. ๐Ÿฅ˜ Put your Heavy pot on Medium-High heat with the Oil.

  3. ๐ŸคŽ Sprinkle the Brown Sugar into the center of the oil. Watch it closely. When it turns dark brown and starts to foam (froth), quickly add the beef.

  4. ๐Ÿฅ„ Stir to coat the beef in the caramelized sugar. Cover for 5 Minutes to let the meat release its juices.

  5. ๐Ÿ”ฅ Uncover and cook until the liquid Reduces/Dries down and the meat is dark and seared.

Step 2: The Braise

  1. ๐Ÿ’ง Pour in the Beef Broth and Coconut Milk.

  2. โฒ๏ธ Bring to a boil, then turn the heat to Low. Cover and simmer for 45 Minutes until the beef starts to get soft.

Step 3: The Provisions

  1. ๐Ÿ  Add the Pumpkin, Carrots, Sweet Potato, Green Fig, and Cassava. These are your "ground provisions."

  2. ๐Ÿฅ’ Add the Okra and place the Whole Hot Pepper on top. Do not cut the pepper! Let it float for flavor.

  3. โฒ๏ธ Cook for 20 Minutes until the vegetables are tender.

Step 4: The Final Flourish

  1. ๐ŸฅŸ Drop your Dumplings and Corn into the bubbling liquid.

  2. โฒ๏ธ Cook for the final 15 Minutes. The starch from the dumplings will thicken the soup into a rich gravy.

  3. ๐ŸŒฟ Stir in the Chopped Herbs and turn off the heat.


๐Ÿ›ก๏ธ SAFETY FIRST

  • ๐ŸŒถ๏ธ The Pepper Warning: If the Hot Pepper bursts, the entire pot will become extremely spicy. Use a Large spoon to remove it carefully before serving, especially if children are eating.

  • ๐Ÿฆท Cassava Core: Cassava has a woody string in the middle. Remove this "vein" before adding it to the pot to make it easier for seniors and kids to eat.

  • ๐Ÿฅ˜ The Heavy Lift: This pot will be very full and heavy. Use Oven mitts and keep the pot on the back burner to prevent accidental spills.
