๐ THE INGREDIENTS
The Beef & Base
๐ฅฉ Halal Stew Beef 2 lbs (cubed)
๐ง Green Seasoning 2 tbsp (Mashed culantro, garlic, ginger, thyme)
๐บ Cooking Oil 2 tablespoons
๐ค Brown Sugar 1 tablespoon (for "browning" the meat)
๐ฅฅ Coconut Milk 1 can (13.5 oz)
๐ Beef Broth 4 cups (Low-sodium/Halal)
The Provisions (Vegetables)
๐ Pumpkin 1 cup (chopped)
๐ฅ Carrots 2 (sliced)
๐ Sweet Potato & Cassava 1 cup each (peeled/cubed)
๐ Green Fig (Green Banana) 2 (peeled/sliced)
๐ฅ Okra 6 to 8 pieces
๐ถ๏ธ Whole Hot Pepper 1 (Scotch Bonnet or Habanero)
The Finish
๐ฝ Corn on the Cob 2 ears (cut into small rounds)
๐ฅ Flour Dumplings (Simple flour/water/salt dough rolled into "spinners")
๐ฟ Fresh Herbs (Parsley and Culantro)
๐จโ๐ณ THE METHOD
Step 1: The Browning
๐ฅฉ Place the Beef in a Small bowl with the green seasoning. Let it sit for 20 Minutes.
๐ฅ Put your Heavy pot on Medium-High heat with the Oil.
๐ค Sprinkle the Brown Sugar into the center of the oil. Watch it closely. When it turns dark brown and starts to foam (froth), quickly add the beef.
๐ฅ Stir to coat the beef in the caramelized sugar. Cover for 5 Minutes to let the meat release its juices.
๐ฅ Uncover and cook until the liquid Reduces/Dries down and the meat is dark and seared.
Step 2: The Braise
๐ง Pour in the Beef Broth and Coconut Milk.
โฒ๏ธ Bring to a boil, then turn the heat to Low. Cover and simmer for 45 Minutes until the beef starts to get soft.
Step 3: The Provisions
๐ Add the Pumpkin, Carrots, Sweet Potato, Green Fig, and Cassava. These are your "ground provisions."
๐ฅ Add the Okra and place the Whole Hot Pepper on top. Do not cut the pepper! Let it float for flavor.

Step 4: The Final Flourish
๐ฅ Drop your Dumplings and Corn into the bubbling liquid.
โฒ๏ธ Cook for the final 15 Minutes. The starch from the dumplings will thicken the soup into a rich gravy.
