π THE INGREDIENTS
The Shrimp & Pasta
π€ Shrimp 1/2 pound (peeled and deveined)
π Pasta 250 grams (Penne or Fettuccine)
π« Olive oil 2 tablespoons
π§ Garlic powder, Smoked paprika (or Cayenne), Salt, & Black pepper 1 pinch each
π§ Sea salt 1 large spoonful (for the pasta water)
The Creamy Sauce
π§ Unsalted butter 1 stick (1/2 cup)
π§ Garlic 3 cloves (minced)
π§ Shallot 1/2 (minced small)
π₯ Heavy cream 2 cups
π Tomato paste 1 tablespoon
π§ Parmesan cheese 1/2 cup (freshly grated)
π Sun-dried tomatoes 1/4 cup (chopped)
π¨βπ³ THE METHOD
π₯ Boil the Pasta: Fill your Large pasta pot with water and a big spoonful of Sea salt. Bring to a boil. Add the Pasta and cook until it is soft but still has a little "bite."
π§ͺ Drain: Use your Colander to drain the pasta. π« Toss it with a tiny drop of Olive oil so it doesn't stick together.
π₯£ Season Shrimp: In a Small bowl, toss the Shrimp with Olive oil and the Spices.
π³ Sear the Shrimp: Put the Deep frying pan on Medium-High heat. Cook the shrimp for 2 Minutes per side until they turn pink and curl into a "C" shape. Take them out and put them on a plate.
π₯ The Butter Base: Lower the heat to Medium. Melt the Butter in the same pan. Add the Garlic and Shallot. Stir for 2 Minutes until they smell sweet (don't let them turn brown!).
π₯ The Cream: Pour in the Heavy cream and stir in the Tomato paste until the sauce turns a pretty light orange.
𫧠Simmer: Let the sauce bubble gently until it looks a little thicker.
π§ The Cheese: Stir in the Parmesan cheese and Sun-dried tomatoes. Taste itβadd a tiny bit more Salt if you need to.
π Combine: Put the cooked Pasta into the sauce. Toss it well so every noodle is covered.
π€ Finish: Place the Shrimp back on top. π Turn the stove dial to the Off position. Sprinkle with extra Parmesan.
π‘οΈ SAFETY FIRST
𧀠Boiling Water: When draining the pasta, always pour the water away from your body into the sink so the steam doesn't burn your face.
π€ Shrimp Check: Shrimp cook very fast! If they start to look like an "O" shape, they are overcooked and might be rubbery. Aim for a "C" shape!
π§ Garlic Watch: Minced garlic burns in seconds. If the pan looks too hot, lift it off the burner for a moment to cool it down.
