๐ THE INGREDIENTS
The Fish Cakes
๐ Canned tuna 2 cans (in water or oil)
๐ฐ Water chestnuts 1 small can (chopped small)
๐ Ginger 1 small piece (peeled and grated)
๐ฑ Spring onions 2 stalks (sliced thin)
๐ฟ Fresh coriander 1 small bunch (chopped)
๐ถ๏ธ Red chili 1 small (seeds removed and chopped)
๐ Kaffir lime leaves 2 leaves (shredded very thin)
๐ง Salt & Pepper 1 small pinch each
๐ Fish sauce 1 teaspoon (Halal certified)
๐ฅ Eggs 2 large (whole)
๐ฅ Groundnut oil 3 tablespoons (for frying)
The Zesty Dip
๐ค Sugar 1 tablespoon
๐ Fish sauce 2 tablespoons
๐ Apple cider vinegar 1 tablespoon (Halal substitute for rice wine vinegar)
๐ Lime juice 1 tablespoon (freshly squeezed)
๐ฟ Fresh coriander 1 extra handful (chopped)
๐จโ๐ณ THE METHOD
๐งช Drain the Fish: Put the Canned tuna into the Sieve. Let the water or oil drip out. Do not press down on the fish, or it will get too dry.
๐ฅฃ Mix the Cakes: In a Medium bowl, put the flaked Tuna, Water chestnuts, Ginger, Spring onions, Coriander, Red chili, and Kaffir lime leaves.
๐ง Season: Add the Salt, Pepper, and Fish sauce.
๐ฅ Bind: Crack the Eggs into the bowl. Use your clean hands to mix everything together.
๐ฅฉ Shape: Roll the mixture into balls the size of a lemon, then flatten them into thick patties.
๐ฅฃ Make the Dip: In the second Medium bowl, stir the Sugar, Fish sauce, Apple cider vinegar, Lime juice, and extra Coriander until the sugar melts.
๐ฅ Put your Large frying pan on the stove and turn the heat to Medium-High. Add the Groundnut oil.
๐ The Clock Trick: Place your fish cakes in the pan one by one starting at the top (12 o'clock) and moving around in a circle. This helps you remember which one to flip first!
โณ Cook for 2 Minutes per side until they look golden and crunchy.
๐ Turn the stove dial to the Off position.
๐ฝ๏ธ Serve the hot fish cakes with the Zesty Dip on the side.

๐ฅ Raw Egg: Always wash your hands with warm soapy water after touching the raw egg mixture and the patties.
๐ Clock Order: Using the "clock trick" prevents you from rushing. It keeps the pan organized so you don't accidentally touch a hot cake with your fingers.
๐ถ๏ธ Chili Heat: Even without seeds, chilies can sting. Use a fork to hold the chili while you chop it to keep the juices off your skin.
