๐Ÿ›’ THE INGREDIENTS

The Fish Cakes

  • ๐ŸŸ Canned tuna 2 cans (in water or oil)

  • ๐ŸŒฐ Water chestnuts 1 small can (chopped small)

  • ๐Ÿ  Ginger 1 small piece (peeled and grated)

  • ๐ŸŒฑ Spring onions 2 stalks (sliced thin)

  • ๐ŸŒฟ Fresh coriander 1 small bunch (chopped)

  • ๐ŸŒถ๏ธ Red chili 1 small (seeds removed and chopped)

  • ๐Ÿƒ Kaffir lime leaves 2 leaves (shredded very thin)

  • ๐Ÿง‚ Salt & Pepper 1 small pinch each

  • ๐ŸŸ Fish sauce 1 teaspoon (Halal certified)

  • ๐Ÿฅš Eggs 2 large (whole)

  • ๐Ÿฅœ Groundnut oil 3 tablespoons (for frying)

The Zesty Dip

  • ๐Ÿค Sugar 1 tablespoon

  • ๐ŸŸ Fish sauce 2 tablespoons

  • ๐ŸŽ Apple cider vinegar 1 tablespoon (Halal substitute for rice wine vinegar)

  • ๐Ÿ‹ Lime juice 1 tablespoon (freshly squeezed)

  • ๐ŸŒฟ Fresh coriander 1 extra handful (chopped)


๐Ÿ‘จโ€๐Ÿณ THE METHOD

  1. ๐Ÿงช Drain the Fish: Put the Canned tuna into the Sieve. Let the water or oil drip out. Do not press down on the fish, or it will get too dry.

  2. ๐Ÿฅฃ Mix the Cakes: In a Medium bowl, put the flaked Tuna, Water chestnuts, Ginger, Spring onions, Coriander, Red chili, and Kaffir lime leaves.

  3. ๐Ÿง‚ Season: Add the Salt, Pepper, and Fish sauce.

  4. ๐Ÿฅš Bind: Crack the Eggs into the bowl. Use your clean hands to mix everything together.

  5. ๐Ÿฅฉ Shape: Roll the mixture into balls the size of a lemon, then flatten them into thick patties.

  6. ๐Ÿฅฃ Make the Dip: In the second Medium bowl, stir the Sugar, Fish sauce, Apple cider vinegar, Lime juice, and extra Coriander until the sugar melts.

  7. ๐Ÿ”ฅ Put your Large frying pan on the stove and turn the heat to Medium-High. Add the Groundnut oil.

  8. ๐ŸŸ The Clock Trick: Place your fish cakes in the pan one by one starting at the top (12 o'clock) and moving around in a circle. This helps you remember which one to flip first!

  9. โณ Cook for 2 Minutes per side until they look golden and crunchy.

  10. ๐Ÿ›‘ Turn the stove dial to the Off position.

  11. ๐Ÿฝ๏ธ Serve the hot fish cakes with the Zesty Dip on the side.
