π³ 1 Large non-stick frying pan
π₯£ 2 Medium bowls (one for batter, one for dip)

π THE INGREDIENTS
The Textured Batter
π½ Canned sweetcorn 1 can (340g, drained and dried)
πΎ All-purpose flour 3/4 cup
π₯ Baking powder 1/2 teaspoon
π₯ Egg 1 large
π₯ Milk 4 tablespoons
π« Olive oil 1 teaspoon (for the batter) + more for frying
πΆοΈ Red chili 1/2 (deseeded and chopped)
π± Spring onions 2 stalks (sliced thin)
πΏ Fresh coriander (cilantro) 1 small handful (chopped)
π§ Salt & Black pepper 1 pinch each
The Zesty Dip
π₯ Natural yogurt 1/2 cup
πΆοΈ Red chili 1/2 (finely chopped)
π Lime 1/2 (juiced)
πΏ Fresh coriander 1 teaspoon (chopped)
π¨βπ³ THE METHOD
1. The Prep (The Secret to Crunch)
π§Ό Dry the Corn: This is the most important step! Spread the drained Sweetcorn on Paper towels and pat it until it is bone-dry. Wet corn = soggy fritters.
π₯£ Make the Dip: In a Small bowl, stir the Yogurt, Chili, Lime juice, and Coriander. Set it aside so the flavors can mingle.
2. The "Chunky" Batter
π§ͺ Sift: Sieve the Flour and Baking powder into a Medium bowl.
π₯ Whisk: Make a hole in the center. Whisk in the Egg, Milk, and a drizzle of Olive oil until smooth.
π½ Fold: Stir in the Dried corn, Chili, Spring onions, and Coriander.
The Golden Ratio: You want 2/3 solids and 1/3 batter. It should look like a pile of corn barely held together by dough!
3. The Fry
π₯ Heat: Put the Large frying pan on Medium-High heat with a good splash of olive oil.
π₯ Scoop: Drop large spoonfuls of batter into the pan. Space them out so they don't touch.
π₯ Flatten: Use the back of your Spoon to gently press them into thick discs.
π Flip: Once the bottom is golden (about 2β3 Minutes), flip them over. Cook for 2 Minutes more.
π‘οΈ SAFETY FIRST
π½ Pop Warning: Corn kernels contain a tiny bit of steam inside. Occasionally, a kernel might "pop" in the hot oil. Wear your Oven mitt when flipping to protect your hand from tiny oil splashes.
πΆοΈ Eye Protection: After deseeding the chilies, do not touch your face or eyes! Wash your hands with dish soap immediatelyβwater alone won't wash away the spicy oils.
π§€ Pan Handle: Keep the handle of the frying pan turned inward toward the center of the stove so you don't accidentally bump it while cooking.
