π THE INGREDIENTS
The Tawa Marinade
π Halal Chicken Thighs 500g (cut into bite-sized pieces)
π₯ Plain Yogurt 1/2 cup
π§ Black & White Pepper 1 teaspoon (mixed)
π Fresh Ginger 1 tablespoon (finely minced)
πΌ Saffron 1 small pinch (crushed)
The Street-Style Finish
πΊ Cooking Oil 3 tablespoons
πΆοΈ Green Chilies 2 pieces (sliced lengthwise)
π Lemon 1/2 piece
π« Chapati or Flatbread 2 pieces
π¨βπ³ THE METHOD
1. The Spiced Yogurt Soak (0β10 Mins)
π₯£ Mix: In your Mixing bowl, whisk together the Yogurt, Pepper, Ginger, and Saffron.
π Coat: Toss the Chicken pieces into the bowl. Stir until every piece is thick with the yogurt marinade.
β³ Brief Rest: Let it sit for 5 Minutes while you prep the pan.
2. The Tawa Sear (10β25 Mins)
π₯ Heat: Add the Cooking Oil to the Tawa or flat pan over Medium-High heat until shimmering.
π³ Sizzle: Carefully lay the chicken pieces onto the hot surface.
π₯ Press & Turn: Cook for 10 Minutes. Use the edge of your Metal spatula to press down on the meatβthis mimics the street-vendor technique to create crispy, charred edges.
πΆοΈ Aromatics: Scatter the Green Chilies over the chicken during the last 3 minutes of cooking.
3. The Final Squeeze (25β30 Mins)
π Brighten: Squeeze the Lemon juice directly over the sizzling chicken. The acid will help deglaze the flavorful bits stuck to the pan.
π« Warm: Briefly toast your Chapati in a separate dry pan for 30 Seconds per side.
π― Assemble: Pile the hot, charred chicken onto the flatbread. π Turn the stove Off.
π‘οΈ SAFETY FIRST
π₯ Oil Splatter: Tawa cooking involves high heat and moisture (from the yogurt). This will cause popping and splashing. Keep your face back and use a long spatula to stay clear of the "splash zone."
πΆοΈ Chili Contact: Green chilies contain oils that linger on skin. Wash your hands with soap immediately after slicing; one accidental eye rub can cause intense stinging.
π³ Heavy Iron: If using a traditional cast-iron Tawa, it will retain heat for a long time and is very heavy. Always use an Oven mitt to steady the handle while you press down on the chicken.
