  • ๐Ÿฅ˜ 1 Deep sautรฉ pan (with a tight-fitting lid)

  • ๐Ÿฅฃ 1 Medium bowl (for marinating)

  • ๐Ÿงช 1 Sieve (to rinse rice)

  • ๐Ÿฅ„ 1 Large stirring spoon

  • ๐Ÿ”ช 1 Knife & Cutting board

  • ๐Ÿงค 1 Oven mitt


๐Ÿ›’ THE INGREDIENTS

The Chicken & Marinade

  • ๐Ÿ— Halal Chicken thighs 4 to 6 pieces (bone-in, skin-on)

  • ๐Ÿง‚ Soy sauce 1/4 cup

  • ๐ŸคŽ Brown sugar 2 tablespoons

  • ๐ŸŽ Apple cider vinegar + 1 tsp sugar 2 tablespoons (Halal substitute for mirin)

  • ๐Ÿ  Fresh ginger 1 small piece (grated)

  • ๐Ÿง„ Garlic 3 cloves (chopped small)

  • ๐Ÿง‚ Salt & White pepper 1 small pinch each

The Rice Base

  • ๐Ÿš White rice 2 cups (long-grain or Jasmine)

  • ๐Ÿ’ง Water 2 1/4 cups

  • ๐ŸŒฑ Green onions 2 stalks (sliced thin for the top)


๐Ÿ‘จโ€๐Ÿณ THE METHOD

  1. ๐Ÿ”ช Prep the Chicken: Use your Knife to trim off any long, flabby pieces of skin.

  2. ๐Ÿฅฃ Marinate: In a Medium bowl, mix the Soy sauce, Brown sugar, Vinegar/sugar mix, Ginger, Garlic, Salt, and White pepper. Add the Chicken and stir. Let it sit for 1 Hour (or overnight in the fridge).

  3. ๐Ÿฅ˜ The Cold Start: Place the chicken skin-side down in a Cold deep sautรฉ pan.

  4. ๐Ÿ”ฅ Render the Fat: Turn the heat to Low, then slowly move it up to Medium-High. This melts the chicken fat so the skin gets very crispy without sticking!

  5. ๐Ÿณ Brown the Skin: Cook patiently until the skin is dark gold. Watch the garlic! If it starts to look black, turn the heat down. Flip the chicken and cook for 3 Minutes on the other side. Take the chicken out and put it on a plate (it isn't fully cooked yet).

  6. ๐Ÿงช Prep the Rice: Put the Rice in a Sieve and rinse it with cold water until the water is clear.

  7. ๐Ÿฅ˜ Deglaze: Pour the Water into the pan with the chicken juices. Stir to scrape up the brown bits. Add the Rice and stir lightly.

  8. ๐Ÿ— The Nest: Place the Chicken back on top of the rice.

  9. ๐Ÿซง The Steam: Bring the water to a boil, then put the lid on and turn the heat to Low.

  10. โณ Wait: Cook for 15 Minutes. Do not lift the lid! 11. ๐Ÿ›‘ Rest: Turn the stove dial to the Off position. Let the pan sit for 10 Minutes with the lid still on. This makes the rice fluffy.

  11. ๐ŸŒฑ Finish: Sprinkle with Green onions and serve.


๐Ÿ›ก๏ธ SAFETY FIRST

  • ๐Ÿ— Raw Chicken: Always wash your hands and the Medium bowl with hot soapy water after touching raw chicken.

  • ๐Ÿ”ฅ Burning Soy: Soy sauce and sugar burn very easily because of the sugar content. If you see smoke, turn the heat down immediately!

  • ๐Ÿงค Steam Release: When you finally lift the lid after 10 minutes, use an Oven mitt and tilt the lid away from your face so the steam doesn't burn you.
