๐ ONE-PAN SOY-GLAZED CHICKEN & RICE ๐
๐ฑ OVERVIEW
Total Time: 45 Minutes (plus 1 hour marinating)

๐ฅ 1 Deep sautรฉ pan (with a tight-fitting lid)
๐ฅฃ 1 Medium bowl (for marinating)
๐งช 1 Sieve (to rinse rice)
๐ฅ 1 Large stirring spoon
๐ช 1 Knife & Cutting board
๐งค 1 Oven mitt
๐ THE INGREDIENTS
The Chicken & Marinade
๐ Halal Chicken thighs 4 to 6 pieces (bone-in, skin-on)
๐ง Soy sauce 1/4 cup
๐ค Brown sugar 2 tablespoons
๐ Apple cider vinegar + 1 tsp sugar 2 tablespoons (Halal substitute for mirin)
๐ Fresh ginger 1 small piece (grated)
๐ง Garlic 3 cloves (chopped small)
๐ง Salt & White pepper 1 small pinch each
The Rice Base
๐ White rice 2 cups (long-grain or Jasmine)
๐ง Water 2 1/4 cups
๐ฑ Green onions 2 stalks (sliced thin for the top)
๐จโ๐ณ THE METHOD
๐ช Prep the Chicken: Use your Knife to trim off any long, flabby pieces of skin.
๐ฅฃ Marinate: In a Medium bowl, mix the Soy sauce, Brown sugar, Vinegar/sugar mix, Ginger, Garlic, Salt, and White pepper. Add the Chicken and stir. Let it sit for 1 Hour (or overnight in the fridge).
๐ฅ The Cold Start: Place the chicken skin-side down in a Cold deep sautรฉ pan.
๐ฅ Render the Fat: Turn the heat to Low, then slowly move it up to Medium-High. This melts the chicken fat so the skin gets very crispy without sticking!
๐ณ Brown the Skin: Cook patiently until the skin is dark gold. Watch the garlic! If it starts to look black, turn the heat down. Flip the chicken and cook for 3 Minutes on the other side. Take the chicken out and put it on a plate (it isn't fully cooked yet).
๐งช Prep the Rice: Put the Rice in a Sieve and rinse it with cold water until the water is clear.
๐ฅ Deglaze: Pour the Water into the pan with the chicken juices. Stir to scrape up the brown bits. Add the Rice and stir lightly.
๐ The Nest: Place the Chicken back on top of the rice.
๐ซง The Steam: Bring the water to a boil, then put the lid on and turn the heat to Low.
โณ Wait: Cook for 15 Minutes. Do not lift the lid! 11. ๐ Rest: Turn the stove dial to the Off position. Let the pan sit for 10 Minutes with the lid still on. This makes the rice fluffy.
๐ฑ Finish: Sprinkle with Green onions and serve.
๐ก๏ธ SAFETY FIRST
๐ Raw Chicken: Always wash your hands and the Medium bowl with hot soapy water after touching raw chicken.
๐ฅ Burning Soy: Soy sauce and sugar burn very easily because of the sugar content. If you see smoke, turn the heat down immediately!
๐งค Steam Release: When you finally lift the lid after 10 minutes, use an Oven mitt and tilt the lid away from your face so the steam doesn't burn you.
