๐ฅ Egg 1 large (the "Magic Ingredient")
๐พ All-purpose flour 1 cup
๐ฅ Milk or Water 3/4 cup
๐ Raisins 1 small handful
๐ฝ Canned corn 1 small can (drained)
๐ฅ Baking powder 1 teaspoon
๐ White bread 2 slices
๐ง Margarine 1 tablespoon
๐ค Cinnamon & Powdered sugar 1 pinch each
๐ฏ Maple syrup (optional for the top)
๐จโ๐ณ THE METHOD
Option A: The "One-Egg" Raisin Pancakes ๐
๐ฅฃ Mix: In a Medium bowl, whisk 1 Egg and Milk. Stir in the Flour and a pinch of Salt until it looks like thick cream.
๐ Fold: Drop in the Raisins and stir gently.
๐ฅ Put the Frying pan on Medium heat with a little oil or butter.
๐ณ Pour a small circle of batter into the pan. Wait for tiny bubbles to appear on top (about 2 Minutes).
๐ Flip the pancake and cook for 1 Minute more until it is golden.
Option B: Quick Golden Corn Fritters ๐ฝ
๐ฅฃ Mix: In a Medium bowl, stir together the drained Canned corn, 1 Egg, 1/2 cup Flour, Baking powder, and a splash of Milk.
๐ณ Put the Frying pan on Medium heat with 2 tablespoons of oil.
๐ฅ Scoop a big spoonful of the corn mix into the hot oil. Flatten it slightly with your spoon.
โณ Fry for 3 Minutes on each side until they are very crunchy. These are great with salt or syrup!
Option C: 60-Second Cinnamon Toast ๐
๐ Lay 2 slices of White bread on a microwave-safe plate.
๐ง Spread a thick layer of Margarine on top of each slice.
๐ค Sprinkle the Cinnamon and Powdered sugar over the margarine.
โณ Microwave for 30 to 45 Seconds.
๐งค Use your Oven mitt to take the plate out. The margarine and sugar melt together into a sweet, gooey frosting!
๐ก๏ธ SAFETY FIRST
๐ฅ Hot Oil: When making Corn Fritters, the oil can "spit" if the corn is too wet. Make sure to drain the corn very well before mixing.
๐งค Microwave Plate: The plate can get surprisingly hot when melting margarine. Always use your Oven mitt to move the plate to the table.
๐ The Flip: When flipping pancakes, flip away from your body so any tiny drops of hot batter don't land on your arms.
