π THE INGREDIENTS
The Dry Base
π₯£ Rolled Oats 1 cup (Old-fashioned)
βͺ Baking powder 1 teaspoon
π Cinnamon 1/2 teaspoon
The Fresh & Dried Fruit
π Pears 2 medium (ripe but firm)
π« Blueberries 50g (fresh or frozen)
π Dried apricots 50g (chopped)
π Orange zest 1 teaspoon (freshly grated)
The Binding & Crunch
π₯ Eggs 2 large
π₯ Mixed Nuts 60g (Walnuts, Almonds, or Pecans)
π₯ Avocado oil 1 tablespoon (for greasing the dish)
π¨βπ³ THE METHOD
1. The Prep (0β15 Mins)
π₯ Preheat: Set your oven to 180Β°C (350Β°F).
π₯ Prep Dish: Pour the Avocado oil into the Baking dish. Use a paper towel to coat the bottom and sides thoroughly to prevent sticking.
π₯£ Mix Dry: In your Large mixing bowl, combine the Oats, Baking powder, and Cinnamon.
π₯ Bind: Crack the Eggs directly into the bowl. Stir until the oats are evenly moistened.
2. The Fruit & Nut Chop (15β25 Mins)
π Zest: Grate the Orange skin directly into the bowl, stopping once you reach the white pith.
πͺ Dice: On your Cutting board, cube the Pears (discarding the core) and chop the Dried apricots into raisin-sized bits.
π₯ Crush: Roughly chop the Nuts with your knife or break them apart by hand for a rustic texture.
π₯ Fold: Add the pears, apricots, nuts, and Blueberries to the bowl. Gently fold everything together until the fruit is evenly distributed.
3. The Bake (25β60 Mins)
π₯ Level: Transfer the mixture into the oiled Baking dish. Use the back of your spoon to press it down into an even, flat layer.
β²οΈ Bake: Place in the center of the oven for 45 Minutes.
π§€ Finish: Using Oven mitts, remove the dish when the edges are pulling away from the sides and the top is a deep golden brown. π Turn the oven Off.
βοΈ Set: Allow the bake to rest on the counter for 10 Minutes. This helps the oats "set" so you can cut clean slices.
π‘οΈ SAFETY FIRST
π Knuckle Guard: When using a small grater for Orange zest, the surface is deceptively sharp. Stop grating when the orange piece gets small to avoid nicking your fingertips.
πͺ Slippery Pears: Ripe pears have high water content and can slide under a knife. To cut safely, slice a small piece off one side of the pear first to create a flat, stable base against the board.
