๐ THE INGREDIENTS
The Prime Rib Patties
๐ฅฉ Prime rib slider patties 12 small (approx. 2โ3 oz each)
๐ง Salt & Black pepper 1 teaspoon each
๐ง Garlic powder 1 teaspoon
๐ง White American cheese 12 small slices
The Beef Bacon Jam
๐ฅ Beef bacon 1 package (cut into thin strips)
๐ง Small onion 1 (finely chopped)
๐ถ Worcestershire sauce 2 tablespoons
๐ Apple cider vinegar 1 small splash
๐ Dark maple syrup 3 tablespoons
The Assembly
๐ Slider buns 12 (brioche or potato rolls)
๐ฅ Pickles 12 slices
๐จโ๐ณ THE METHOD
1. The Reverse Sear (0โ20 Mins)
๐ฅ Preheat: Set your oven to 135ยฐC (275ยฐF).
๐ง Season: In a Small bowl, mix the salt, pepper, and garlic powder. Sprinkle generously over both sides of the Patties.
โฒ๏ธ Slow Cook: Place patties on the Baking sheet and bake for 15 Minutes, or until a Meat thermometer reads 49ยฐC (120ยฐF).
2. The Bacon Jam (10โ30 Mins)
๐ฅ Render: Place Beef bacon strips into a cold frying pan. Turn the heat to Medium-Low.
๐ง Soften: Once the fat starts to melt, add the Onion. Cook until the onion is translucent and the bacon is crispy.
๐ Glaze: Stir in the Worcestershire sauce, Apple cider vinegar, and Maple syrup.
โณ Reduce: Simmer until the liquid becomes thick and syrupy (like jam). ๐ Turn the heat Off.
3. The Crust & Assembly (30โ45 Mins)
๐ฅ High Heat: Get your Grill or heavy pan very hot on High heat.
๐ฅฉ Sear: Move the warm patties to the grill. Sear for 1 Minute per side to get a dark, caramelized crust.
๐ง Melt: Place a slice of Cheese on each patty immediately after flipping.
๐ Build: Place a Pickle on the bottom bun, add the cheesy Patty, and top with a large spoonful of the Bacon Jam.
๐ก๏ธ SAFETY FIRST
๐ฅ High-Heat Flare-ups: The final sear happens fast and hot. Use Long tongs to keep your hands and arms away from the direct flame or heat source.
๐ก๏ธ Internal Temp: Using a Meat thermometer is the only way to ensure the prime rib is cooked to your preferred doneness while remaining safe to eat.
๐ฅ Grease Splatter: Beef bacon fat can "pop" aggressively when it reaches high temperatures. Wear an apron and keep your face back when stirring the jam base.
