๐Ÿ›’ THE INGREDIENTS

The Chicken & Broth

  • ๐Ÿ— Halal Chicken Thighs 4 to 6 pieces (skin on or off, bone-in for flavor)

  • ๐Ÿง… Onion 1 large (chopped small)

  • ๐Ÿ… Fresh Tomatoes 2 medium (blended or finely chopped)

  • ๐Ÿ… Tomato Paste 1 tablespoon

  • ๐Ÿ’ง Hot Water 4 cups

  • ๐Ÿบ Cooking Oil 2 tablespoons

The Rice & Toppings

  • ๐ŸŒพ Basmati Rice 2 cups (washed and soaked for 20 Minutes)

  • ๐Ÿฅ• Carrots 3 large (peeled and cut into thin sticks)

  • ๐Ÿ‡ Raisins 1/4 cup

  • ๐Ÿง‚ Salt 2 teaspoons

The Spice Blend

  • ๐ŸคŽ Cumin Seeds 1 tablespoon (toasted in a pan and crushed)

  • ๐Ÿ–ค Black Pepper 1/2 tablespoon

  • ๐ŸŒฟ Bay Leaf 1 piece

  • ๐Ÿชต Cinnamon Stick 1 piece

  • ๐ŸŸข Cardamom Pods 3 pieces


๐Ÿ‘จโ€๐Ÿณ THE METHOD

  1. ๐Ÿฅฃ Put the Basmati Rice in a bowl with water. Let it soak for 20 Minutes while you prep.

  2. ๐Ÿณ Put the Carrots and Raisins in your Frying pan with a tiny bit of oil. Stir for 4 Minutes until the carrots are soft. Take them out and put them on a plate.

  3. ๐Ÿฅ˜ Put the Large pot on the stove on Medium-High heat with the Cooking Oil.

  4. ๐Ÿง… Add the Onion and stir for 5 Minutes until it looks brown and smells sweet.

  5. ๐Ÿ— Put the Halal Chicken Thighs into the pot. Cook for 4 Minutes on each side until the skin is golden brown.

  6. ๐ŸคŽ Add the Cumin, Black Pepper, Bay Leaf, Cinnamon, and Cardamom. Stir for 1 Minute.

  7. ๐Ÿ… Add the Tomato Paste and the Blended Tomatoes. Stir until everything is red and bubbling.

  8. ๐Ÿ’ง Pour in the Hot Water and add the Salt.

  9. ๐Ÿ”ฅ Put the lid on. Let it boil for 15 Minutes. (Chicken cooks much faster than lamb!)

  10. ๐ŸŒพ Drain the water from your Rice. Pour the rice into the pot with the chicken.

  11. ๐Ÿ“ Check the water: it should be about 1 cm above the rice. (Add a splash of water if needed).

  12. ๐Ÿฅ• Place the cooked Carrots and Raisins on top of the rice.

  13. ๐Ÿงค Put the lid on tight. Turn the heat to the Very Lowest setting. Let it steam for 18 Minutes.

  14. ๐Ÿ›‘ Turn the stove dial to the Off position. Wait 5 Minutes before opening the lid.


๐Ÿ›ก๏ธ SAFETY FIRST

  • ๐Ÿ— Chicken Temperature: Use a meat thermometer if you have one; the chicken should be 74ยฐC (165ยฐF) in the thickest part.

  • ๐Ÿฅ˜ Steam Release: When you open the lid after steaming, the steam will be very hot. Lift the lid away from your face to stay safe.

  • ๐Ÿงค Heavy Lifting: Even with chicken, a pot of rice and water is heavy. Always use Oven mitts to move the pot.
