๐ THE INGREDIENTS
The Chicken & Broth
๐ Halal Chicken Thighs 4 to 6 pieces (skin on or off, bone-in for flavor)
๐ง Onion 1 large (chopped small)
๐ Fresh Tomatoes 2 medium (blended or finely chopped)
๐ Tomato Paste 1 tablespoon
๐ง Hot Water 4 cups
๐บ Cooking Oil 2 tablespoons
The Rice & Toppings
๐พ Basmati Rice 2 cups (washed and soaked for 20 Minutes)
๐ฅ Carrots 3 large (peeled and cut into thin sticks)
๐ Raisins 1/4 cup
๐ง Salt 2 teaspoons
The Spice Blend
๐ค Cumin Seeds 1 tablespoon (toasted in a pan and crushed)
๐ค Black Pepper 1/2 tablespoon
๐ฟ Bay Leaf 1 piece
๐ชต Cinnamon Stick 1 piece
๐ข Cardamom Pods 3 pieces
๐จโ๐ณ THE METHOD
๐ฅฃ Put the Basmati Rice in a bowl with water. Let it soak for 20 Minutes while you prep.
๐ณ Put the Carrots and Raisins in your Frying pan with a tiny bit of oil. Stir for 4 Minutes until the carrots are soft. Take them out and put them on a plate.
๐ฅ Put the Large pot on the stove on Medium-High heat with the Cooking Oil.
๐ง Add the Onion and stir for 5 Minutes until it looks brown and smells sweet.
๐ Put the Halal Chicken Thighs into the pot. Cook for 4 Minutes on each side until the skin is golden brown.
๐ค Add the Cumin, Black Pepper, Bay Leaf, Cinnamon, and Cardamom. Stir for 1 Minute.
๐ Add the Tomato Paste and the Blended Tomatoes. Stir until everything is red and bubbling.
๐ง Pour in the Hot Water and add the Salt.
๐ฅ Put the lid on. Let it boil for 15 Minutes. (Chicken cooks much faster than lamb!)
๐พ Drain the water from your Rice. Pour the rice into the pot with the chicken.
๐ Check the water: it should be about 1 cm above the rice. (Add a splash of water if needed).
๐ฅ Place the cooked Carrots and Raisins on top of the rice.
๐งค Put the lid on tight. Turn the heat to the Very Lowest setting. Let it steam for 18 Minutes.
๐ Turn the stove dial to the Off position. Wait 5 Minutes before opening the lid.
๐ก๏ธ SAFETY FIRST
๐ Chicken Temperature: Use a meat thermometer if you have one; the chicken should be 74ยฐC (165ยฐF) in the thickest part.
๐ฅ Steam Release: When you open the lid after steaming, the steam will be very hot. Lift the lid away from your face to stay safe.
๐งค Heavy Lifting: Even with chicken, a pot of rice and water is heavy. Always use Oven mitts to move the pot.
