๐ฅ 1 Large heavy pot (with a lid)
๐ช๏ธ 1 Blender or Food Processor
๐ฅ 1 Large stirring spoon
๐ฅฃ 2 Medium bowls
๐ช 1 Large knife
๐น 1 Cutting board
๐งค 1 Oven mitt
๐ THE INGREDIENTS
๐ถ๏ธ Dried chiles 3 to 5 large pieces (Pasilla, Guajillo, or Ancho)
๐ถ๏ธ Chipotle peppers in adobo 2 small peppers (from a can)
๐ฅฉ Halal Chuck roast 1 kilogram (cut into bite-sized cubes)
๐ง Onion 1 large (chopped small)
๐ง Garlic 3 cloves (chopped small)
๐ฟ Cumin & Cinnamon 1 teaspoon each
๐ฝ Masa harina 2 tablespoons (corn flour)
๐ Beef stock 2 cups
๐ง Water 1 cup
๐ Bay leaves 2 dried leaves
๐ค Brown sugar 1 tablespoon
๐ Apple cider vinegar 1 tablespoon
๐ฅ Sour cream 1 small tub (for the top)
๐จโ๐ณ THE METHOD
๐ถ๏ธ Pull the stems off the Dried chiles and shake out the seeds.
๐ฅ Put your Large heavy pot on the stove on Medium heat. Toast the Dried chiles for 2 Minutes until they smell like popcorn.
๐ฅฃ Move the toasted Dried chiles to a Medium bowl and cover them with very hot water. Let them soak for 20 Minutes.
๐ฅฉ Turn the stove to Medium-High. Put the Halal Chuck roast cubes into the pot in small groups. Stir for 5 Minutes until brown, then move them to a clean plate.
๐ง Put the Onion and Garlic into the same pot. Stir for 5 Minutes.
๐ช๏ธ Put the soaked Dried chiles, the Chipotle peppers, and 1 cup of the soaking water into the Blender. Blend until it looks like a smooth purple paint.
๐ฅ Pour this chile paint into the pot with the Onion. Add the Cumin and Cinnamon. Stir for 2 Minutes.
๐ฅฃ In a Medium bowl, mix the Masa harina with a little water to make a thin paste. Pour it into the pot.
๐ฅฉ Add the Beef stock, the rest of the Water, the Bay leaves, and all the browned Halal Chuck roast.
๐ซง Wait for it to bubble, then turn the heat to Low.
โณ Put the lid on halfway. Let it cook for 2 Hours until the meat is soft enough to break with a spoon.
๐ Stir in the Brown sugar and Apple cider vinegar.
๐ Turn the stove dial to the Off position.
๐ฅฃ Scoop into bowls and add a dollop of Sour cream.

๐ช๏ธ Blender Warning: Never put boiling liquid in a blender. Let the chiles cool for a few minutes before blending. Hold the lid down with a towel.
๐ฅฉ Batch Cooking: Do not crowd the pot with too much meat at once, or it will steam instead of browning. Use a long spoon to avoid oil pops.
๐งค Heavy Lifting: This pot will be very heavy with the meat and liquid. Always use your Oven mitt to steady the pot.
