๐ณ 1 Large frying pan or Wok
๐ฅฃ 3 Small bowls (for sauce, chicken, and eggs)
๐ฅ 1 Large stirring spoon or Spatula
๐น 1 Cutting board & Knife
๐งค 1 Oven mitt
๐ THE INGREDIENTS
The Savory "Dark" Sauce
๐ง Water 2 tablespoons
๐ถ Dark Soy Sauce 1 tablespoon (for the deep brown color)
๐ถ Light Soy Sauce 1 tablespoon (Halal-certified)
๐ Mushroom Sauce 1 tablespoon (Halal substitute for Oyster sauce)
๐ง Salt or MSG 1 small pinch
๐ฅฅ Palm Sugar 1 tablespoon (or Brown Sugar)
The Stir-Fry Mix
๐ Wide Rice Noodles 2 cups (Fresh or soaked until soft)
๐ฅฉ Halal Chicken Breast 200 grams (sliced very thin)
๐ฅฆ Chinese Broccoli 2 cups (Stems sliced thin, leaves kept large)
๐ฅ Eggs 2 large (beaten in a bowl)
๐ง Garlic 2 cloves (minced)
๐บ Cooking Oil 2 tablespoons
๐จโ๐ณ THE METHOD
๐ฅฃ In a Small bowl, mix the Water, Dark Soy Sauce, Light Soy Sauce, Mushroom Sauce, Sugar, and Salt. Set it aside.
๐ฅ Put your Frying pan on the stove and turn the heat to High. Add a little Oil.
๐ฅฉ Put the Halal Chicken in the pan. Stir for 3 Minutes until it looks Browned. Take the chicken out and put it on a plate.
Note: It is okay if it is not 100% cooked yet; it will finish later!
๐ง Add the Garlic and the Broccoli Stems to the same pan. Stir for 2 Minutes.
๐ฅฌ Add the Broccoli Leaves and stir for 1 Minute until they look Wilted and soft. Take the greens out and put them on the plate with the chicken.
๐ฅ Pour the Beaten Eggs into the empty pan. Stir quickly for 1 Minute until they are scrambled. Scoop them out and put them on the plate.
๐ Put the Rice Noodles into the hot pan. Pour your Dark Sauce over them.
๐ฅ Stir the noodles for 2 Minutes until they turn a dark brown color.
๐ฅ Add the Chicken, Greens, and Eggs back into the pan. Toss everything together for 1 Minute.
๐ Turn the stove dial to the Off position.
๐ก๏ธ SAFETY FIRST
๐ Noodle Stickiness: Rice noodles can become very sticky. Use a Large stirring spoon in each hand to "lift and toss" them so they don't clump together.
๐ฅฆ Stem Safety: Broccoli stems can be very hard. Always slice them very thin (like coins) so they are easy for a toddler or senior to chew.
๐ฅ High Heat: Stir-frying happens very fast. Have all your bowls ready next to the stove before you turn on the heat. Use an Oven mitt if the pan handle gets hot.
๐ฅฉ Chicken Check: Cut one piece of chicken in half at the end to make sure it is white all the way through and no longer pink.
