  • ๐Ÿณ 1 Large frying pan or Wok

  • ๐Ÿฅฃ 3 Small bowls (for sauce, chicken, and eggs)

  • ๐Ÿฅ„ 1 Large stirring spoon or Spatula

  • ๐Ÿ›น 1 Cutting board & Knife

  • ๐Ÿงค 1 Oven mitt


๐Ÿ›’ THE INGREDIENTS

The Savory "Dark" Sauce

  • ๐Ÿ’ง Water 2 tablespoons

  • ๐Ÿถ Dark Soy Sauce 1 tablespoon (for the deep brown color)

  • ๐Ÿถ Light Soy Sauce 1 tablespoon (Halal-certified)

  • ๐Ÿ„ Mushroom Sauce 1 tablespoon (Halal substitute for Oyster sauce)

  • ๐Ÿง‚ Salt or MSG 1 small pinch

  • ๐Ÿฅฅ Palm Sugar 1 tablespoon (or Brown Sugar)

The Stir-Fry Mix

  • ๐Ÿœ Wide Rice Noodles 2 cups (Fresh or soaked until soft)

  • ๐Ÿฅฉ Halal Chicken Breast 200 grams (sliced very thin)

  • ๐Ÿฅฆ Chinese Broccoli 2 cups (Stems sliced thin, leaves kept large)

  • ๐Ÿฅš Eggs 2 large (beaten in a bowl)

  • ๐Ÿง„ Garlic 2 cloves (minced)

  • ๐Ÿบ Cooking Oil 2 tablespoons


๐Ÿ‘จโ€๐Ÿณ THE METHOD

  1. ๐Ÿฅฃ In a Small bowl, mix the Water, Dark Soy Sauce, Light Soy Sauce, Mushroom Sauce, Sugar, and Salt. Set it aside.

  2. ๐Ÿ”ฅ Put your Frying pan on the stove and turn the heat to High. Add a little Oil.

  3. ๐Ÿฅฉ Put the Halal Chicken in the pan. Stir for 3 Minutes until it looks Browned. Take the chicken out and put it on a plate.

    • Note: It is okay if it is not 100% cooked yet; it will finish later!

  4. ๐Ÿง„ Add the Garlic and the Broccoli Stems to the same pan. Stir for 2 Minutes.

  5. ๐Ÿฅฌ Add the Broccoli Leaves and stir for 1 Minute until they look Wilted and soft. Take the greens out and put them on the plate with the chicken.

  6. ๐Ÿฅš Pour the Beaten Eggs into the empty pan. Stir quickly for 1 Minute until they are scrambled. Scoop them out and put them on the plate.

  7. ๐Ÿœ Put the Rice Noodles into the hot pan. Pour your Dark Sauce over them.

  8. ๐Ÿฅ„ Stir the noodles for 2 Minutes until they turn a dark brown color.

  9. ๐Ÿฅ˜ Add the Chicken, Greens, and Eggs back into the pan. Toss everything together for 1 Minute.

  10. ๐Ÿ›‘ Turn the stove dial to the Off position.


๐Ÿ›ก๏ธ SAFETY FIRST

  • ๐Ÿœ Noodle Stickiness: Rice noodles can become very sticky. Use a Large stirring spoon in each hand to "lift and toss" them so they don't clump together.

  • ๐Ÿฅฆ Stem Safety: Broccoli stems can be very hard. Always slice them very thin (like coins) so they are easy for a toddler or senior to chew.

  • ๐Ÿ”ฅ High Heat: Stir-frying happens very fast. Have all your bowls ready next to the stove before you turn on the heat. Use an Oven mitt if the pan handle gets hot.

  • ๐Ÿฅฉ Chicken Check: Cut one piece of chicken in half at the end to make sure it is white all the way through and no longer pink.
