π THE INGREDIENTS
The Base & Aromatics
π₯© Halal Mutton 2 lbs (bone-in, cut into 1.5-inch chunks)
πΊ Cooking Oil 1/4 cup (a "generous amount" to fry the spices)
πΏ Whole Spices: 2 Bay leaves, 1 Cinnamon stick, 4 Cardamom pods
π§ Onions 2 medium (finely sliced)
π§ Ginger-Garlic Paste 2 tablespoons
The Masala Build
π Blended Tomatoes 2 large
π‘ Ground Spices: 1 tbsp Cumin, 1 tbsp Coriander, 1 tsp Turmeric, 1 tsp Chili powder (optional)
π₯ Potatoes 3 large (peeled and cut into large quarters)
πΏ Fresh Culantro (Shado Beni) 1/4 cup (chopped)
π§ Salt to taste
π¨βπ³ THE METHOD
π₯ Heat the Oil in your Heavy pot on medium heat. Add the Whole Spices and stir for 30 Seconds until they sizzle.
π§ Add the Onions. Cook for 10 Minutes until they are soft and golden brown. Stir in the Ginger-Garlic Paste for 1 Minute.
π‘ Add the Ground Spices. Stir for 2 Minutes.
Tip: Look for the oil to bubble away from the spice pasteβthis is the Oil Separating.
π Pour in the Blended Tomatoes. Cover the pot and cook for 5 Minutes until the oil surfaces on top of the red sauce.
π₯© Add the Mutton. Stir well to coat every piece. Do not add water yet! Cover and simmer on low for 45 Minutes. The meat will cook in its own juices.
π₯ When the meat is 75% cooked (it should be soft but not falling off the bone), add the Potatoes. Stir for 5 Minutes.
π§ Once the potatoes look halfway done, pour in 2 cups of Hot Water.
π₯ Simmer on Medium-Low for another 20 Minutes until the potatoes are very soft and the gravy is thick.
πΏ Stir in the Fresh Culantro and turn off the heat.
π‘οΈ SAFETY FIRST
π₯© Mutton Prep: Mutton often has small bone fragments from the butcher. Rinse the meat and pat it dry before cooking to ensure no loose shards end up in the gravy.
π₯ The Heavy Pot: A 2 lb mutton stew is very heavy. Use your Oven mitts when moving the pot or holding the handle while stirring.
π₯ Potato Softness: Test the potatoes with a fork. If they aren't "very soft," the starch won't thicken the gravy properly.
π Check the Dials: Always ensure the stove is Off as soon as you finish the simmer.
