The Meat & Fat
🥩 Halal Thin-sliced beef 500g (Ribeye or Strip steak)
🏺 Beef tallow 3 tablespoons (or vegetable oil)
The Aromatics & Veg
🥖 Hoagie rolls 2 large
🧅 Onion 1/2 large (sliced)
🫑 Green pepper 1/2 large (sliced)
🌶️ Jalapeño 1 fresh (sliced)
🌶️ Jarred peppers 2 tbsp each (Banana and Sweet peppers)
The Spiced "Seven-Spice" Blend
🧂 Spice Mix: 2 tsp total (Cumin, Coriander, Allspice, Cardamom, Chipotle, Smoked Paprika, Garlic powder)
🧂 Salt 1 pinch
🧀 Cooper Sharp cheese 6 slices (or White American)
👨🍳 THE METHOD
1. The Vegetable Sauté (0–10 Mins)
🥣 Mix: Combine all the dry spices in your Small bowl.
🔥 Heat: Melt the Beef tallow on the Griddle over Medium heat.
🧅 Sizzle: Add the Onion, Green pepper, and Jalapeño.
🧂 Season: Sprinkle half of the Spice Mix and a pinch of Salt over the veg. Cook for 5 Minutes until soft and browned.
🛹 Park: Push the vegetables to the cool corner of the griddle to stay warm.
2. The Steak Sear (10–20 Mins)
🥩 Sear: Add a bit more tallow to the hot center. Lay the Thin-sliced beef flat. Let it sear undisturbed for 2 Minutes until a dark brown crust forms.
🥄 Chop: Turn the heat to Low. Use your Two spatulas to aggressively chop the meat into small bits, mixing in the remaining Spice Mix.
🔄 Combine: Fold the sautéed vegetables, Banana peppers, and Sweet peppers into the chopped meat.
3. The Melt & Wrap (20–25 Mins)
🧀 Cheese: Lay the Cooper Sharp slices over the meat pile.
💨 Steam: Pour a tiny splash of water onto the griddle next to the meat and immediately place the Hoagie rolls (face down) over the pile. The steam will melt the cheese and soften the bread.
🥖 Load: Use the spatula to scoop the cheesy meat into the rolls.
📜 The Secret: Wrap the sandwiches tightly in Parchment paper for 1 Minute. This traps the heat and "cures" the bread to the meat. 🛑 Turn the stove Off.
🛡️ SAFETY FIRST
🔥 Metal Heat Transfer: Metal spatulas conduct heat quickly. If you leave them resting on the hot griddle, the handles will burn you—always use an Oven mitt or a heat-resistant handle.
🔪 Cold Cut Prep: Sliced beef is difficult to handle. For the safest, thinnest slices, put the meat in the freezer for 20 Minutes before cutting; the firmness prevents the knife from slipping.
💨 Steam Flash: Adding water to hot tallow creates an immediate, vertical cloud of steam. Keep your face and chest back from the griddle to avoid a steam burn.
