π₯ SPICED INDIAN-STYLE SAVORY PANCAKES π₯

π³ 1 Large non-stick frying pan * π³ 1 Small frying pan (for the spices)
π₯£ 2 Medium bowls (one for batter, one for yogurt)

π THE INGREDIENTS
The Spiced Batter
πΎ Plain flour 1 cup
π₯ Egg 1 large
π₯ Milk 1 to 1.5 cups (added gradually)
π§ͺ Cumin seeds 1 teaspoon
π Fresh ginger 1 teaspoon (finely sliced)
π§ Garlic 2 cloves (finely sliced)
πΆοΈ Fresh chili 1 small (finelsy sliced)
π« Olive oil 1 tablespoon (plus extra for the pan)
The Potato Filling * π₯ Leftover boiled potatoes 2 cups (sliced)
π‘ Mustard seeds 1 teaspoon
π§ Onion 1 small (sliced thin)
π‘ Turmeric 1/2 teaspoon
The Cooling Dip * π₯ Natural yogurt 1/2 cup
πΏ Fresh coriander 1 handful (chopped)
π¨βπ³ THE METHOD
1. The Flavor Base
π³ Put the Small frying pan on Medium heat. Add Cumin seeds and toast for 1 minute until they smell nutty.
π« Add Olive oil, Ginger, Garlic, and Chili. Sizzle for 2 minutes, then move to a plate to cool down.
2. The Potato Filling
π₯ Heat oil in the Small pan until hot. Add Mustard seedsβwait until they start to "pop" like popcorn!
π§ Add the Onion and Turmeric. Stir until the onions turn bright yellow.
π₯ Add the Leftover potatoes. Stir gently so they soak up the yellow oil and spices. Turn the heat Off and let them sit.
3. The Batter & Cooking
π₯£ In a Medium bowl, whisk the Flour, Egg, and a pinch of Salt/Pepper.
π₯ Gradually whisk in the Milk and your Cooled Spice Base. The batter should be thin like heavy cream.
π₯ Get your Large frying pan very hot with a tiny bit of oil.
π₯ Pour 1.5 ladles of batter in and swirl the pan quickly so it covers the bottom in a thin layer.
π«§ The Cue: When you see small bubbles and the edges start to lift, it's time to flip! Cook for 1 minute on the other side.
4. Assembly
π― Lay a pancake flat. Arrange a line of Spiced Potatoes down one side.
π Roll it up tightly like a wrap.
π₯£ Mix the Yogurt and Coriander in a small bowl. Serve it on the side.
π‘οΈ SAFETY FIRST
π‘ Mustard Seed "Pop": When mustard seeds hit hot oil, they can jump out of the pan. Keep a lid nearby or stand back to protect your eyes.
π³ The Swirl: When swirling the hot pan to spread the batter, always wear your Oven mitt to protect your wrist from the heat of the burner.
πΆοΈ Chili Fingers: After slicing the chili, wash your hands with soap immediately. Do not touch your eyes!
