๐ THE INGREDIENTS
The Protein Base
๐ Halal Chicken drumsticks 4 pieces
๐ค Shrimp 200g (cooked, peeled, and deveined)
๐ Scallion 2 stalks (halved)
๐ Ginger 2 slices (for poaching) + 1 tsp grated (for salad)
๐ Apple Cider Vinegar 1 tablespoon (Halal substitute for cooking wine)
The Aromatics & Crunch
๐ง Onion 1/2 small (thinly sliced)
๐ง Garlic 2 cloves (minced)
๐ถ๏ธ Red chili 1 fresh (sliced)
๐ฑ Green onion 2 stalks (chopped)
๐ถ๏ธ Chili flakes 1 teaspoon
๐ฅ Peanuts 1/4 cup (crushed)
๐ฟ Cilantro 1 handful (chopped)
๐บ Cooking Oil 3 tablespoons
The Savory Dressing
๐ถ Light soy sauce 2 tablespoons
๐ท Black vinegar 1 tablespoon
๐ Halal Oyster sauce 1 tablespoon
๐ง Salt & Sugar 1/2 teaspoon each
๐ Chicken bouillon 1/2 teaspoon (powder)
๐จโ๐ณ THE METHOD
1. The Poach & Shred (0โ18 Mins)
๐ฅ Submerge: Place Chicken drumsticks, Scallion halves, Ginger slices, and Vinegar in the pot. Cover with cold water.
๐ฅ Simmer: Bring to a boil on High, then reduce to Medium. Cook for 15 Minutes until the chicken is opaque to the bone.
๐ด Shred: Remove chicken and let it cool slightly. Use Two forks to pull the meat into thin, ragged shreds. Discard bones and skin.
2. The Sizzling Infusion (18โ25 Mins)
๐ฅฃ Assemble: In the Mixing bowl, combine the Shredded chicken, Shrimp, Onion, Peanuts, Cilantro, Garlic, Fresh chili, Green onion, and Chili flakes.
๐ฅ Heat Oil: Put the Cooking Oil in the Small frying pan on High for 2 Minutes until it shimmers and just begins to smoke.
โ ๏ธ Flash Fry: Use Oven mitts to carefully pour the smoking oil directly over the Chili flakes and Garlic in the bowl. It will hiss and release a toasted aroma.
3. The Final Toss (25โ30 Mins)
๐ถ Season: Add the Soy sauce, Black vinegar, Oyster sauce, Salt, Sugar, and Bouillon to the bowl.
๐ฅ Incorporate: Use your Large spoon to toss vigorously, ensuring the spicy oil and sauces penetrate the shredded meat. ๐ Turn the stove Off.
๐ฅ Serve: Plate immediately or chill for 10 minutes to let the flavors deepen.

๐ฅ Oil Transfer: Pouring 190ยฐC oil into a bowl with moist ingredients can cause an immediate "spitting" reaction. Pour slowly and keep your face at least 12 inches (30cm) back from the bowl.
๐ Bone Inspection: Chicken drumsticks contain small, sharp fibula bones. When shredding with forks, feel the meat to ensure no fragments or cartilage remain in the salad.
