🛒 THE INGREDIENTS
🌯 Flour tortilla 1 large (burrito size)
🥓 Halal Beef bacon 3 strips (chopped)
🥬 Fresh spinach 1 large handful
🍅 Tomato 1/2 (sliced very thin)
🧀 Mozzarella 1/4 cup (shredded—for the "glue")
🧀 Gouda or Cheddar 1/4 cup (shredded—for the flavor)
🥑 Optional Crema: Avocado mashed with a spoonful of yogurt and coriander.
👨🍳 THE METHOD
1. Prep the Fillings
🥓 Crisp the Bacon: Put the Chopped bacon in your Skillet over Medium heat. Fry until it is dark and crunchy.
🥣 Save the Fat: Scoop the bacon onto a Small plate. Crucial Step: Leave about 1 tablespoon of the liquid bacon fat in the pan—this is what makes the tortilla taste amazing!
🥬 Wilt the Spinach: Toss the Spinach into the hot pan with the bacon fat. Stir for only 30–60 Seconds until it shrinks and turns dark green. Move it to the plate with the bacon.
2. The "Folded" Assembly
🫓 Layer: Lay your Tortilla flat on your Cutting board. We are only filling one half of the circle so it’s easy to fold:
Bottom Layer: Mozzarella (this melts first to hold the tortilla shut).
Middle: Crispy bacon, Wilted spinach, and Thin tomato slices.
Top Layer: Gouda or Cheddar (this melts to hold the top shut).
🌙 Fold: Fold the empty half of the tortilla over the fillings to make a "half-moon" shape.
3. The Golden Fry
🔥 Heat: Put your Skillet back on Medium heat with the remaining bacon fat.
🍳 Toast: Place the folded quesadilla in the pan.
🔄 The Early Flip: Don't wait too long! Flip it after 1 Minute so both sides get coated in the bacon fat.
⏳ Finish: Cook for 2 Minutes more on each side until the cheese is oozing out and the bread is golden brown.
🛡️ SAFETY FIRST
🥓 Bacon Pop: Bacon fat can "spit" tiny hot droplets. Keep your shirt sleeves down and use your Oven mitt when stirring the spinach.
🍅 Tomato Moisture: Slice your Tomatoes very thin. If they are too thick, they will release too much water and make your quesadilla soggy inside.
🧤 The Spatula Slide: When flipping the "half-moon," slide your Spatula all the way under the middle. Flip it toward the "folded" edge so the fillings don't fall out the open side!
