๐Ÿ›’ THE INGREDIENTS

  • ๐ŸŒฏ Flour tortilla 1 large (burrito size)

  • ๐Ÿฅ“ Halal Beef bacon 3 strips (chopped)

  • ๐Ÿฅฌ Fresh spinach 1 large handful

  • ๐Ÿ… Tomato 1/2 (sliced very thin)

  • ๐Ÿง€ Mozzarella 1/4 cup (shreddedโ€”for the "glue")

  • ๐Ÿง€ Gouda or Cheddar 1/4 cup (shreddedโ€”for the flavor)

  • ๐Ÿฅ‘ Optional Crema: Avocado mashed with a spoonful of yogurt and coriander.


๐Ÿ‘จโ€๐Ÿณ THE METHOD

1. Prep the Fillings

  1. ๐Ÿฅ“ Crisp the Bacon: Put the Chopped bacon in your Skillet over Medium heat. Fry until it is dark and crunchy.

  2. ๐Ÿฅฃ Save the Fat: Scoop the bacon onto a Small plate. Crucial Step: Leave about 1 tablespoon of the liquid bacon fat in the panโ€”this is what makes the tortilla taste amazing!

  3. ๐Ÿฅฌ Wilt the Spinach: Toss the Spinach into the hot pan with the bacon fat. Stir for only 30โ€“60 Seconds until it shrinks and turns dark green. Move it to the plate with the bacon.

2. The "Folded" Assembly

  1. ๐Ÿซ“ Layer: Lay your Tortilla flat on your Cutting board. We are only filling one half of the circle so itโ€™s easy to fold:

    • Bottom Layer: Mozzarella (this melts first to hold the tortilla shut).

    • Middle: Crispy bacon, Wilted spinach, and Thin tomato slices.

    • Top Layer: Gouda or Cheddar (this melts to hold the top shut).

  2. ๐ŸŒ™ Fold: Fold the empty half of the tortilla over the fillings to make a "half-moon" shape.

3. The Golden Fry

  1. ๐Ÿ”ฅ Heat: Put your Skillet back on Medium heat with the remaining bacon fat.

  2. ๐Ÿณ Toast: Place the folded quesadilla in the pan.

  3. ๐Ÿ”„ The Early Flip: Don't wait too long! Flip it after 1 Minute so both sides get coated in the bacon fat.

  4. โณ Finish: Cook for 2 Minutes more on each side until the cheese is oozing out and the bread is golden brown.


๐Ÿ›ก๏ธ SAFETY FIRST

  • ๐Ÿฅ“ Bacon Pop: Bacon fat can "spit" tiny hot droplets. Keep your shirt sleeves down and use your Oven mitt when stirring the spinach.

  • ๐Ÿ… Tomato Moisture: Slice your Tomatoes very thin. If they are too thick, they will release too much water and make your quesadilla soggy inside.

  • ๐Ÿงค The Spatula Slide: When flipping the "half-moon," slide your Spatula all the way under the middle. Flip it toward the "folded" edge so the fillings don't fall out the open side!
