π THE INGREDIENTS
PB&J Cookies
π₯ Peanut butter 1/2 cup (creamy)
π€ Muscovado sugar 1/2 cup (packed)
π§ Butter 4 tablespoons (softened)
π₯ Egg 1 large
π₯ Milk 1 tablespoon
π¦ Vanilla extract 1 teaspoon
πΎ Flour 1.5 cups
π₯ Baking powder 1/2 teaspoon
π Strawberry Jam 2 tablespoons
Grilled Caesar & Dressing
π Halal Chicken breasts 2 large
π₯ Egg yolks 2 (room temperature)
π₯£ Dijon mustard 1 teaspoon
π· Red wine vinegar 1 tablespoon
π« Olive oil 1/2 cup
π Anchovies 3 fillets (finely chopped)
π§ Garlic 1 clove (minced)
π§ Parmesan 1/2 cup (grated)
π Lemon juice 2 tablespoons
π₯¬ Romaine lettuce 2 heads (chopped)
π₯ Crusty bread 2 cups (diced)
π¨βπ³ THE METHOD
1. PB&J Thumbprint Cookies (Start Here!)
π₯£ Cream: Mix Peanut butter, Muscovado sugar, and Butter until fluffy. Whisk in the Egg, Milk, and Vanilla.
πΎ Fold: Stir in Flour, Baking powder, and a pinch of Salt.
πͺ Shape: Roll into balls, flatten slightly on the Baking tray, and press your thumb in the center. Fill the hole with a dot of Jam and extra Peanut butter.
π‘οΈ Bake: At 180Β°C for 10β12 Minutes. Let them cool completelyβthey will firm up!
2. The Caesar Dressing & Croutons
π₯£ Emulsify: Whisk Egg yolks, Mustard, and Vinegar. Slowly drip in Olive oil while whisking constantly until it looks like thick mayo.
π§ͺ Season: Stir in Anchovies, Garlic, Parmesan, Lemon juice, and a splash of water to loosen it up.
π₯ Croutons: Fry bread cubes in olive oil with salt/pepper. When golden, toss in a handful of Parmesan and cook for 30 seconds until it forms a cheesy crust.
3. The Griddled Chicken
πͺ Butterfly: Slice the Chicken breasts through the middle (like opening a book) so they are thin. Season with salt and pepper.
π₯ Grill: Place on a Hot griddle pan for 3β4 Minutes per side.
π Rest: Move chicken to a plate and spoon over 2 tablespoons of the Caesar dressing. Let it soak in for 5 Minutes, then slice.
4. Assembly
π₯¬ Toss Lettuce with a squeeze of Lemon, the Dressing, and Croutons.
π₯ Serve the warm chicken separately or on top at the very last second so the leaves stay crunchy!
π‘οΈ SAFETY FIRST
π₯ Raw Yolks: This traditional dressing uses raw egg yolks. If you are serving someone very young, elderly, or pregnant, use a pasteurized egg or a store-bought mayo base instead.
π₯ Griddle Smoke: Griddle pans get very hot. If your kitchen fills with smoke, turn on the fan or crack a window.
π§€ Cookie Tray: Don't be fooled by the cookies looking "soft" when they come out; they are very hot! Use your Oven mitt and let them rest on the tray for 5 minutes before moving.
