🛠️ THE KIT
🥘 1 Deep sauté pan (with lid)
🍳 1 Large frying pan (for potatoes)
🥘 1 Small saucepan (for caramel)
🥣 1 Mixing bowl (for custard)
🍮 4 Ramekins & 1 Deep baking dish (for water bath)
🧤 1 Oven mitt
🛒 THE INGREDIENTS
Chicken Fricassée
🍗 Halal Chicken thighs 4 pieces (skin-on, bone-in)
🥓 Halal Beef bacon 100g (chopped, as a substitute for pancetta)
🍄 Chestnut mushrooms 200g (halved)
🧄 Garlic 3 cloves (crushed)
🌿 Rosemary, Thyme, & Bay leaf 1 sprig/leaf each
🥃 Apple juice + 1 tsp vinegar 1/4 cup (Halal substitute for brandy flambé)
🥣 Chicken stock 1.5 cups
🌿 Fresh parsley (chopped)
Sautéed Potatoes
🥔 Potatoes 4 large (cut into finger-sized sticks)
🧈 Butter or Olive oil 3 tablespoons (substitute for goose fat)
🧅 Shallots 2 small (sliced)
🌿 Garlic & Rosemary 1 sprig each
Lavender Crème Caramel
🤍 Caster sugar 1 cup (stored with Dried edible lavender)
🥛 Milk 2 cups
🥚 Eggs 4 large
🍦 Vanilla bean 1 (seeds scraped)
🌸 Dried lavender flowers (edible grade)
👨🍳 THE METHOD
1. Lavender Crème Caramel (Start First!)
🥘 Caramel: Melt 1/2 cup Lavender sugar in a Small saucepan until it turns dark amber. Pour quickly into the bottom of 4 Ramekins. 🌸 Scatter a few lavender flowers on top.
🥛 Custard: Heat Milk and Vanilla until hot (not boiling). Whisk Eggs and remaining sugar in a Bowl, then slowly pour in the hot milk while whisking.
♨️ Bake: Pour custard into ramekins. Place them in a Deep baking dish filled halfway with hot water. Bake at 150°C for 30 Minutes.
🧊 Chill: Let them cool, then put in the fridge. To serve, dip the bottom of the ramekin in hot water and flip onto a plate!
2. The Chicken Fricassée
🍗 Brown: Season Chicken with salt/pepper. Fry skin-side down in the Deep sauté pan until crispy.
🥓 Sizzle: Add Beef bacon, Mushrooms, Garlic, and Herbs.
🥘 Simmer: Pour in the Apple juice mix and Stock.
⏳ Cook: Cover with the lid (leave it slightly open to let steam out) and simmer for 10-15 Minutes. Finish with Parsley.
3. Sautéed Potatoes
🥘 Parboil: Boil potato sticks in water for 5-6 Minutes. Drain well.
🍳 Crisp: Fry potatoes in Butter/Oil in the Large frying pan until golden.
🧅 Flavor: In the last 3 Minutes, toss in Shallots, Garlic, and Rosemary.
🛡️ SAFETY FIRST
🌸 Edible Lavender: Make sure your lavender is "Culinary Grade." Lavender from a flower shop or garden may have chemicals that are not safe to eat.
🧤 Water Bath (Bain-Marie): When moving the deep dish into the oven, the hot water can slosh. Move slowly and always use Oven mitts.
🔥 Hot Sugar: Caramel is much hotter than boiling water. If it touches your skin, it will burn. Never taste the caramel while it is in the pan!
