๐ณ 1 Large frying pan (with a lid)
๐ฅฃ 1 Medium bowl
๐ฅ 1 Large stirring spoon (or spatula)

๐ THE INGREDIENTS
๐ฅ Yukon Gold potatoes 3 medium (cut into small cubes)
๐ญ Halal Beef Kielbasa 1 ring (sliced into "coins" or half-moons)
๐ง Yellow onion 1 small (chopped)
๐ซ Bell pepper 1 large (any color, chopped)
๐ซ Olive oil 2 tablespoons
๐ง Garlic powder, Smoked paprika, & Oregano 1/2 teaspoon each
๐ง Salt & Black pepper 1 pinch each
๐ง Oaxaca or Mozzarella cheese 1/2 cup (shredded)
๐ฅ Eggs 3 or 4 large
๐ฑ Green onions 2 stalks (sliced for the top)
๐จโ๐ณ THE METHOD
๐ฅ Prep the Potatoes: Rinse your chopped Yukon Gold potatoes in cold water until the water is clear. Put them in a Clean kitchen towel and squeeze them very dry.
๐ฅฃ Season: In a Medium bowl, toss the dry potatoes with Olive oil, Garlic powder, Smoked paprika, Oregano, Salt, and Black pepper.
๐ญ Brown the Sausage: Put the Halal Beef Kielbasa into a Cold frying pan. Turn the heat to Medium-High. Stir for 5 Minutes until the sausage is brown and the fat melts into the pan. Scoop the sausage out and put it on a plate.
๐ณ Fry the Potatoes: Put the seasoned potatoes into the same pan (add a tiny bit more oil if it looks dry). Turn the heat to Medium. Stir often for 10-12 Minutes until the potatoes are golden and soft.
๐ง Add Veggies: Push the potatoes to the side and add the Onion and Bell pepper. Stir for 4 Minutes until they are a little bit soft.
๐ง The Melt: Stir the sausage back in. Sprinkle the Cheese in a thin layer over everything.
๐ฅ The Eggs: Crack the Eggs directly on top of the mixture.
๐ซง Steam: Put the lid on the pan. Cook for 4 Minutes. Tip: If the eggs aren't cooking, add 1 small spoonful of water to the pan and put the lid back on quickly to make steam!
๐ Turn Off: Turn the stove dial to the Off position.
๐ฑ Finish: Sprinkle Green onions over the top.

๐ฅ Potato Choice: We use Yukon Golds because they hold their shape! Russet potatoes can turn into mush if you aren't careful.
๐ญ Cold Pan Start: Starting the sausage in a cold pan helps the fat melt slowly so it doesn't burn. This gives you the best flavor for frying your potatoes!
๐งค Lid Safety: When you lift the lid to check the eggs, lift the side away from your face so the hot steam doesn't touch your skin.
