๐Ÿ›’ THE INGREDIENTS

  • ๐Ÿฅ” Yukon Gold potatoes 3 medium (cut into small cubes)

  • ๐ŸŒญ Halal Beef Kielbasa 1 ring (sliced into "coins" or half-moons)

  • ๐Ÿง… Yellow onion 1 small (chopped)

  • ๐Ÿซ‘ Bell pepper 1 large (any color, chopped)

  • ๐Ÿซ’ Olive oil 2 tablespoons

  • ๐Ÿง‚ Garlic powder, Smoked paprika, & Oregano 1/2 teaspoon each

  • ๐Ÿง‚ Salt & Black pepper 1 pinch each

  • ๐Ÿง€ Oaxaca or Mozzarella cheese 1/2 cup (shredded)

  • ๐Ÿฅš Eggs 3 or 4 large

  • ๐ŸŒฑ Green onions 2 stalks (sliced for the top)


๐Ÿ‘จโ€๐Ÿณ THE METHOD

  1. ๐Ÿฅ” Prep the Potatoes: Rinse your chopped Yukon Gold potatoes in cold water until the water is clear. Put them in a Clean kitchen towel and squeeze them very dry.

  2. ๐Ÿฅฃ Season: In a Medium bowl, toss the dry potatoes with Olive oil, Garlic powder, Smoked paprika, Oregano, Salt, and Black pepper.

  3. ๐ŸŒญ Brown the Sausage: Put the Halal Beef Kielbasa into a Cold frying pan. Turn the heat to Medium-High. Stir for 5 Minutes until the sausage is brown and the fat melts into the pan. Scoop the sausage out and put it on a plate.

  4. ๐Ÿณ Fry the Potatoes: Put the seasoned potatoes into the same pan (add a tiny bit more oil if it looks dry). Turn the heat to Medium. Stir often for 10-12 Minutes until the potatoes are golden and soft.

  5. ๐Ÿง… Add Veggies: Push the potatoes to the side and add the Onion and Bell pepper. Stir for 4 Minutes until they are a little bit soft.

  6. ๐Ÿง€ The Melt: Stir the sausage back in. Sprinkle the Cheese in a thin layer over everything.

  7. ๐Ÿฅš The Eggs: Crack the Eggs directly on top of the mixture.

  8. ๐Ÿซง Steam: Put the lid on the pan. Cook for 4 Minutes. Tip: If the eggs aren't cooking, add 1 small spoonful of water to the pan and put the lid back on quickly to make steam!

  9. ๐Ÿ›‘ Turn Off: Turn the stove dial to the Off position.

  10. ๐ŸŒฑ Finish: Sprinkle Green onions over the top.

  • ๐Ÿฅ” Potato Choice: We use Yukon Golds because they hold their shape! Russet potatoes can turn into mush if you aren't careful.

  • ๐ŸŒญ Cold Pan Start: Starting the sausage in a cold pan helps the fat melt slowly so it doesn't burn. This gives you the best flavor for frying your potatoes!

  • ๐Ÿงค Lid Safety: When you lift the lid to check the eggs, lift the side away from your face so the hot steam doesn't touch your skin.
