๐ THE INGREDIENTS
๐ง Onion 1 large (chopped small)
๐ฅ Carrot 1 large (chopped small)
๐งช Celery 2 stalks (chopped small)
๐ซ Poblano & Red bell pepper 1 of each (chopped small)
๐ Sweet potato 1 large (peeled and cut into cubes)
๐ฟ Chili powder, Cumin, & Garlic powder 1 tablespoon each
๐ง Salt & Pepper 1 small pinch each
๐ถ๏ธ Chipotle peppers 1 small can (use 1 or 2 peppers, chopped)
๐ Fire-roasted tomatoes 1 large can
๐ฅฆ Vegetable broth 2 cups
๐ซ Black beans 2 cans (drained and rinsed)
๐ซ Chili beans 1 can (do not drain)
๐ฅซ Refried beans 1 can (The Magic Thickener!)
๐ฟ Fresh cilantro 1 small bunch (for the top)
๐ช Saltine crackers 1 box (for serving)
๐จโ๐ณ THE METHOD
๐ช Use your Knife and Cutting board to chop the Onion, Carrot, Celery, Poblano, Red bell pepper, and Sweet potato into small pieces.
๐ฅ Put your Large soup pot on the stove and turn the heat to Medium.
๐ฅ Put all the chopped vegetables into the pot. Stir for 10 Minutes until they look shiny and a little brown.
๐ฟ Sprinkle the Chili powder, Cumin, Garlic powder, Salt, and Pepper over the vegetables.
๐ถ๏ธ Add the chopped Chipotle peppers and stir for 1 Minute.
๐ Pour in the Fire-roasted tomatoes, Vegetable broth, Black beans, and Chili beans.
๐ซง Turn the heat to High until you see big bubbles, then turn it down to Low.
โณ Put the lid on and cook for 20 Minutes until the Sweet potato is soft.
๐ฅซ Open the can of Refried beans and scoop them into the pot.
๐ฅ Stir very well for 10 Minutes until the Refried beans disappear and the chili looks thick and creamy.
๐ Turn the stove dial to the Off position.
๐ฅฃ Scoop into bowls and sprinkle Fresh cilantro on top. Serve with Saltine crackers.
๐ก๏ธ SAFETY FIRST
๐ช Hard Vegetables: Carrots and sweet potatoes are very hard to cut. Always keep your fingers tucked in like a "lion's paw" to keep them away from the knife blade.
๐ฅซ Sharp Cans: The metal edges of the bean cans are very sharp after opening. Do not touch the inside of the rim.
๐งค Hot Splashes: When you stir in the thick Refried beans, the chili might "pop" or bubble up. Wear your Oven mitt to protect your hand.
