๐ THE INGREDIENTS
๐ฅ Halal Beef bacon 6 strips (sliced into bite-sized pieces)
๐ซ Red bell pepper 1 large (chopped small)
๐ฑ Spring onions 3 stalks (sliced)
๐ฅ Eggs 7 to 8 large
๐ง Parmesan cheese 1/4 cup (grated)
๐ง Goat cheese 100 grams (cut into small chunks)
๐ข Frozen peas 1/2 cup (thawed)
๐ฟ Fresh basil 1 small handful (roughly chopped)
๐ง Salt & Black pepper 1 pinch each
๐จโ๐ณ THE METHOD
๐ฅฃ Season the Eggs: In your Large mixing bowl, whisk the Eggs, Parmesan, Salt, and Black pepper. This creates a savory, "cake-like" base for your fritata.
๐ฅ Crisp the Bacon: Put the Oven-safe frying pan on High heat. Add the Beef bacon. Stir for 4 Minutes until it is crunchy and the fat has melted into the pan.
๐ซ Sautรฉ the Peppers: Add the Red bell pepper to the bacon fat. Stir for 3 Minutes until they soften.
๐ฑ Add Onions: Toss in the Spring onions and cook for 1 Minute more.
๐ฟ The Fresh Bits: Add the Peas and Fresh basil to the pan. Stir once to mix the colors.
๐ฅ The Pour: Pour the Egg mixture over the vegetables. Use your Spatula to lightly move the eggs around so the liquid reaches the bottom of the pan.
๐ง Goat Cheese Pockets: Push half of the Goat cheese chunks into the liquid egg so they hide inside. Sprinkle the rest on top.
๐ณ The Stove Finish: Let it cook on the stove for 2 Minutes until the edges look solid.
๐ฅ The Grill: Use your Oven mitt to move the pan under the oven grill (broiler). Cook for 4 to 5 Minutes until the top is golden and the center is soft but not runny.
๐ The Flip: Let it cool for a minute. Run a Knife around the edge, place a Cutting board over the pan, and flip it upside down!

๐ณ Oven-Safe Check: Double-check that your pan handle is not made of plastic! If it is, it will melt under the grill. Use a metal or cast-iron pan.
๐งค The "Hidden" Hot Handle: After you take the pan out of the oven, the handle will stay hot for a long time. Keep your Oven mitt over the handle so you don't accidentally grab it with your bare hand!
๐ฅ High Heat Splatter: Bacon fat can pop when it gets very hot. Stand back slightly when you first put the bacon in the pan.
