π THE INGREDIENTS
π« Poblano peppers 2 large (mild green peppers)
πΏ Fresh cilantro 1 small bunch
π₯« Green enchilada sauce 1 small jar (Halal certified)
πΆοΈ JalapeΓ±o 1 small (seeds removed)
π« White beans 2 cans (drained and rinsed)
π½ Corn 1 can (drained)
π Chicken stock 2 cups
π¦ Halal Ground turkey 500 grams (use the darker meat for more flavor)
π§ Onion 1 small (chopped small)
π Sweet potato 1 medium (peeled and cut into small cubes)
π§ Garlic 2 cloves (chopped small)
π§ Fajita seasoning, Cumin, & SazΓ³n 1 tablespoon each
π§ Queso fresco 1 small block (crumbly white cheese for the top)
π§ Pickled red onion 1 small jar (for the top)
π₯ Sour cream 1 small tub (for the top)
π¨βπ³ THE METHOD
π§€ Use your Tongs to hold 1 Poblano pepper over the stove flame for 5 Minutes until the skin looks black and burnt.
π₯£ Put the burnt pepper in a Medium bowl and cover it with a lid for 10 Minutes.
πͺ Use your fingers to peel the black skin off the pepper, then use your Knife to cut out the seeds.
πͺοΈ Put the peeled pepper, Fresh cilantro, Green enchilada sauce, JalapeΓ±o, 1 can of White beans, half the Corn, and the Chicken stock into the Blender. Blend until it looks like a green smoothie.
π₯ Put your Large soup pot on the stove and turn the heat to Medium-High.
π¦ Put the Halal Ground turkey, Onion, the other Poblano pepper (chopped), Sweet potato, and Garlic into the pot.
π₯ Stir for 8 Minutes until the meat is brown and the onions are soft.
π§ Sprinkle the Fajita seasoning, Cumin, and SazΓ³n into the pot. Stir for 1 Minute.
πͺοΈ Pour the green smoothie from the Blender into the pot.
π« Add the rest of the White beans and the rest of the Corn.
β³ Turn the heat to Low. Put the lid on and cook for 25 Minutes until the Sweet potato cubes are soft.
π Turn the stove dial to the Off position.
π₯£ Scoop into bowls and top with Queso fresco, Pickled red onion, and Sour cream.
π‘οΈ SAFETY FIRST
π₯ Open Flame: When charring the pepper, keep your sleeves rolled up and hair tied back. Always use Tongs, never your fingers.
πͺοΈ Blender Splash: Make sure the Blender lid is on tight before you turn it on. Start on the lowest speed first.
πͺ Sweet Potato: These can be very hard to cut! Ask a "kitchen helper" for a steady hand to keep the potato from rolling while you slice it.
