๐ฅช FILLET STEAK CIABATTA ๐ฅฉ
๐ฑ OVERVIEW

๐ณ 1 Oven-safe frying pan (Cast iron is best)
๐ฅ 1 Small saucepan (for the relish)
๐ฅฃ 1 Small bowl (for the mayo)
๐ฅ 1 Large spoon
๐ช 1 Very sharp knife & Cutting board
๐งค 1 Oven mitt
๐จ 1 Pastry brush (or spoon for oiling bread)
๐ THE INGREDIENTS
The Steak & Crust
๐ฅฉ Halal Beef Fillet 1 thick piece (about 300-400g)
๐ง Coarse black pepper 1 tablespoon (crushed big)
๐ง Sea salt 1 pinch
๐ง Garlic 1 head (cut in half across the middle)
๐ฟ Fresh thyme 4 sprigs
๐ง Butter 2 tablespoons
๐ซ Olive oil 1 tablespoon
The Tomato Jam (Relish)
๐ Cherry tomatoes 1 cup (red and yellow mix)
๐ง Red onion 1/2 (chopped small)
๐ถ๏ธ Red chili 1/2 (chopped small)
๐ท Sherry vinegar 1 tablespoon
๐ฟ Fresh basil 1 handful (torn)
The Assembly
๐ฅ Ciabatta loaf 1 large (sliced open)
๐ฅ Mayonnaise 3 tablespoons
๐ฅฃ Wholegrain mustard 3 teaspoons
๐ฅฌ Lettuce leaves 2 or 3 (crunchy)
๐จโ๐ณ THE METHOD
1. The Perfect Fillet
๐ฅฉ Season: Roll the steak in the Coarse pepper and Salt until it has a thick grey crust.
๐ฅ Sear: Heat the Oven-safe pan to High with oil. Sear the steak on all sides (even the ends!) for 2 minutes per side.
๐ง Baste: Toss in the Garlic (cut-side down), Thyme, and Butter.
๐ฅ The Trick: Rest the steak on top of the garlic and herbs. Spoon the bubbling butter over the meat for 1 minute.
๐ก๏ธ Oven: Put the whole pan in the oven at 200ยฐC for 8 to 10 minutes.
๐ REST: This is the most important part! Take the steak out and let it sit on a plate for 10 minutes. Do not cut it yet!
2. The Tomato Relish
๐ฅ In a Small saucepan, cook the Red onion and Chili in oil until soft.
๐ Add the Tomatoes. Cook on Medium heat until they "pop" and collapse. Mash them with your Spoon.
๐ท Stir in the Sherry vinegar and simmer until it looks like thick jam. Stir in the Basil at the very end.
3. The Mustard Mayo & Bread
๐ฅฃ Mix the Mayonnaise and Wholegrain mustard in a Small bowl.
๐ฅ Brush the Ciabatta with olive oil and toast it in a hot pan (or under the grill) until it has dark char marks.
4. Assembly
๐ช Slice the rested steak into thin, pink ribbons.
๐ฅช Layer: Bottom bread > Mustard Mayo > Lettuce > Steak > Relish > Top bread.
๐ก๏ธ SAFETY FIRST
๐งค The Pan Trap: Remember, the pan handle just came out of a 200ยฐC oven! It will stay hot for 20 minutes. Always keep your Oven mitt over the handle so you don't grab it by mistake.
๐ช Sharp Cuts: Use a very sharp knife to slice the steak. Let the knife do the work; don't "saw" back and forth, or you'll tear the tender meat.
๐ถ๏ธ Chili Heat: Wash your hands immediately after chopping the chili. If you touch your eyes, it will sting!
