๐Ÿ›’ THE INGREDIENTS

The Pastry Base

  • ๐Ÿฅ Phyllo dough 500g (baked until golden and crispy)

  • ๐Ÿฅฅ Coconut flakes 2 tablespoons

The Sweetened Milk

  • ๐Ÿฅ› Milk 4 cups

  • ๐Ÿงˆ Ghee 2 tablespoons

  • ๐ŸŒด Dates 1/2 cup (pitted and chopped)

  • ๐Ÿฆ Alcohol-free Vanilla 1 teaspoon

  • ๐Ÿฅ› Condensed milk 1 can (395g, divided)

The Topping & Crunch

  • ๐Ÿถ Ashta (Clotted cream) 1 cup

  • ๐ŸŒฐ Sliced almonds 1/4 cup

  • ๐ŸŸข Toasted pistachios 1/4 cup (chopped)


๐Ÿ‘จโ€๐Ÿณ THE METHOD

1. The Prep & Preheat (0โ€“10 Mins)

  1. ๐Ÿ”ฅ Preheat: Set your oven to 175ยฐC (350ยฐF).

  2. ๐Ÿฅ Crush: Use your hands to flake the Crispy phyllo dough into small pieces directly into the Baking dish.

  3. ๐Ÿ”ช Chop: On your Cutting board, finely chop the Dates and Pistachios.

2. The Infusion (10โ€“20 Mins)

  1. ๐Ÿฅ˜ Warm: In the Medium pot, combine Milk, Ghee, Chopped dates, and Vanilla over Medium heat.

  2. ๐Ÿฅ› Sweeten: Pour in half of the Condensed milk. Stir until the mixture is hot and steaming, but do not let it reach a rolling boil.

  3. ๐Ÿฅง Soak: Carefully pour the hot milk mixture over the phyllo in the baking dish. Ensure all the pastry is evenly submerged.

3. The Cream Layer & Bake (20โ€“40 Mins)

  1. ๐Ÿฅฃ The Topping: In a Small bowl, whisk the Ashta with the remaining Condensed milk.

  2. ๐Ÿฅ„ Spread: Smooth the Ashta mixture in an even layer over the soaked dough.

  3. ๐ŸŒฐ Garnish: Sprinkle the Almonds, Pistachios, and Coconut flakes over the cream.

  4. โฒ๏ธ Bake: Use Oven mitts to place the dish in the oven for 15โ€“20 Minutes until the top is bubbly and golden brown.

  5. ๐Ÿ›‘ Finish: Turn the oven Off. Let the dish rest for 5 Minutes before serving warm.


๐Ÿ›ก๏ธ SAFETY FIRST

  • ๐Ÿ”ฅ Hot Milk Splatter: Pour the hot milk mixture slowly and close to the dish. Rapid pouring can cause hot liquid to splash back onto your hands or face.

  • ๐Ÿงค Heavy Lifting: Ceramic or glass baking dishes become significantly heavier when filled with liquid. Always use Two hands and thick Oven mitts to prevent slips.

  • ๐ŸŒด The "Pit" Check: Even "pitted" dates can occasionally contain fragments of the hard stone. Double-check your Dates while chopping to protect your guests' teeth!
