๐ THE INGREDIENTS
The Pastry Base
๐ฅ Phyllo dough 500g (baked until golden and crispy)
๐ฅฅ Coconut flakes 2 tablespoons
The Sweetened Milk
๐ฅ Milk 4 cups
๐ง Ghee 2 tablespoons
๐ด Dates 1/2 cup (pitted and chopped)
๐ฆ Alcohol-free Vanilla 1 teaspoon
๐ฅ Condensed milk 1 can (395g, divided)
The Topping & Crunch
๐ถ Ashta (Clotted cream) 1 cup
๐ฐ Sliced almonds 1/4 cup
๐ข Toasted pistachios 1/4 cup (chopped)
๐จโ๐ณ THE METHOD
1. The Prep & Preheat (0โ10 Mins)
๐ฅ Preheat: Set your oven to 175ยฐC (350ยฐF).
๐ฅ Crush: Use your hands to flake the Crispy phyllo dough into small pieces directly into the Baking dish.
๐ช Chop: On your Cutting board, finely chop the Dates and Pistachios.
2. The Infusion (10โ20 Mins)
๐ฅ Warm: In the Medium pot, combine Milk, Ghee, Chopped dates, and Vanilla over Medium heat.
๐ฅ Sweeten: Pour in half of the Condensed milk. Stir until the mixture is hot and steaming, but do not let it reach a rolling boil.
๐ฅง Soak: Carefully pour the hot milk mixture over the phyllo in the baking dish. Ensure all the pastry is evenly submerged.
3. The Cream Layer & Bake (20โ40 Mins)
๐ฅฃ The Topping: In a Small bowl, whisk the Ashta with the remaining Condensed milk.
๐ฅ Spread: Smooth the Ashta mixture in an even layer over the soaked dough.
๐ฐ Garnish: Sprinkle the Almonds, Pistachios, and Coconut flakes over the cream.
โฒ๏ธ Bake: Use Oven mitts to place the dish in the oven for 15โ20 Minutes until the top is bubbly and golden brown.
๐ Finish: Turn the oven Off. Let the dish rest for 5 Minutes before serving warm.
๐ก๏ธ SAFETY FIRST
๐ฅ Hot Milk Splatter: Pour the hot milk mixture slowly and close to the dish. Rapid pouring can cause hot liquid to splash back onto your hands or face.
๐งค Heavy Lifting: Ceramic or glass baking dishes become significantly heavier when filled with liquid. Always use Two hands and thick Oven mitts to prevent slips.
๐ด The "Pit" Check: Even "pitted" dates can occasionally contain fragments of the hard stone. Double-check your Dates while chopping to protect your guests' teeth!
