๐ฎ VELVET SPICED COCONUT PUDDING ๐ฅฅ

๐ช๏ธ 1 High-speed blender
๐ฅฃ 1 Large mixing bowl
๐ฅ 1 Baking tin (9-inch round or square)
๐ฅ 1 Whisk or large spoon
๐ง 1 Flour sifter or fine sieve
๐งค 1 Oven mitt
๐ THE INGREDIENTS
The Spiced Coconut Base
๐ฅฅ Coconut Milk 2 cans (13.5 oz each; Halal-certified)
๐ฌ Sugar 1/2 cup (or Coconut Sugar for an alkaline swap)
๐ง Butter 2 tablespoons (Melted; Halal-certified)
๐ค Warm Spices 1 teaspoon (Cinnamon, Nutmeg, and Ginger)
๐ง Salt 1 small pinch
๐ฆ Vanilla Extract 1 teaspoon
๐น Rose Water 1/2 teaspoon
The Root & Squash Filling
๐ Sweet Potato 1 medium (peeled and chopped)
๐ฅ Yellow Yam 1/2 medium (peeled and chopped)
๐ Pumpkin 1/2 cup (peeled and chopped)
๐พ All-Purpose Flour 1/4 cup (Sifted)
๐จโ๐ณ THE METHOD
๐ฅ Preheat your oven to 175ยฐC (350ยฐF). Grease your Baking tin with a little butter.
๐ฅฃ In your Large mixing bowl, whisk together the Coconut Milk, Sugar, Melted Butter, Spices, Salt, Vanilla, and Rose Water.
๐ฅ Take out 1 cup of this liquid and set it aside in a small bowl for the top layer.
๐ช๏ธ Put the chopped Sweet Potato, Yellow Yam, and Pumpkin into the Blender.
๐ฅฅ Pour the rest of the Coconut Milk mix into the blender with the vegetables.
๐ Blend on High for 2 Minutes until the mix looks like a very smooth, orange cream.
๐ฅฃ Pour the blended mix back into the Large mixing bowl.
๐ง Use your Sifter to slowly shake the Flour into the bowl. Whisk gently until there are no white lumps.
๐ฅ Pour the batter into the Baking tin.
โฒ๏ธ Use your Oven mitt to put the tin in the oven and bake for 45 Minutes.
๐งค Carefully pull the rack out. Pour the 1 cup of Spiced Coconut Milk you saved earlier over the top of the pudding.
๐ฅ Bake for another 20 to 25 Minutes until the top layer is soft and set.
๐ Turn the oven dial to the Off position. Let the pudding cool completely before slicing.
๐ก๏ธ SAFETY FIRST
๐ช๏ธ Blender Capacity: Do not fill the Blender more than 3/4 full. If the vegetables are too heavy, blend them in two smaller batches.
๐งค The "Double Bake": When you add the top layer, the tin is extremely hot. Always use Oven mitts and move slowly to avoid splashing the hot liquid.
๐ Chopping Roots: Raw yams and sweet potatoes are very hard and can roll. Cut a thin slice off the side first to create a flat base on your Cutting board so the vegetable stays still while you chop.
