MILLET & COCONUT PUDDING

🍮 MILLET & COCONUT PUDDING

A gentle, creamy porridge alternative that is significantly less acidic than oats or wheat.

📱 OVERVIEW

  • Total Time: 25 Minutes

  • Servings: 4–5 Toddler Portions

  • Storage: Refrigerate for 4 days; Freeze for 1 month.

🛒 THE INGREDIENTS

  • 🌾 Hulled Millet 1 cup (washed thoroughly)

  • 🥥 Full-fat Coconut Milk 1.5 cups (Halal certified)

  • 💧 Filtered Water 1.5 cups

  • 🍂 Cinnamon 1/2 teaspoon

  • 🍇 Raisins 1/4 cup (finely chopped for younger toddlers)

👨‍🍳 THE METHOD

  1. 🥣 Rinse: Place the Millet in a fine-mesh strainer and rinse under cold water for 1 minute to remove any bitterness.

  2. 🥘 Combine: Add the millet, Coconut Milk, Water, and Cinnamon to a medium pot.

  3. 🔥 Boil: Turn the stove to High until the liquid begins to bubble.

  4. ⏲️ Simmer: Turn the heat to Low, cover with a tight lid, and cook for 20 Minutes.

  5. 🍇 Fold: Stir in the Raisins. The residual heat will soften them into "sweet gems."

  6. 🥄 Texture Check: For younger toddlers (12–15 months), use an immersion blender to pulse the pudding into a smoother "custard" consistency.

  7. 🛑 Cool: Let it sit for 5 minutes before portioning into jars.

🛡️ PEDIATRIC SAFETY FIRST

  • 💨 Steamy Reheat: To avoid a "rubbery" texture that can cause choking, always reheat these items with a splash of water and a lid on the pan (or a steamer basket). This keeps the fibers hydrated and soft.

  • 🥜 Nut Allergy Note: If your toddler has a nut sensitivity, replace the Almond Flour in the pancakes with Sunflower Seed Flour or Millet Flour.

  • 🌈 Visual Appeal: For picky eaters, serve the Savory Bites with a side of bright beet hummus or mashed avocado for "dipping."
