🥣 1 Large mixing bowl
🥧 1 Rectangular baking pan (approx. 20cm x 30cm)

🛒 THE INGREDIENTS
🍌 Ripe Bananas 2 large (the spottier, the better for sweetness)
🥛 Unsweetened Almond Milk 1 cup (Halal certified)
🏺 Melted Coconut Oil 2 tablespoons
🌾 Brown Rice Flour 1.5 cups
⚪ Baking Powder 2 teaspoons (Aluminum-free)
🍂 Cinnamon 1 teaspoon
🧂 Sea Salt 1 tiny pinch
🫐 Fresh Berries 1/2 cup (Blueberries or halved Raspberries)
👨🍳 THE METHOD
1. The One-Bowl Batter (0–10 Mins)
🔥 Preheat: Turn your oven to 175°C (350°F).
📜 Line: Line your baking pan with Parchment paper, leaving a little overhang on the sides to lift the bake out later.
🍌 Mash: In your Large mixing bowl, mash the Bananas with a fork until they are a liquid-like puree.
🥛 Wet Mix: Whisk in the Almond Milk and Melted Coconut Oil.
🌾 Dry Mix: Add the Brown Rice Flour, Baking Powder, Cinnamon, and Sea Salt.
🥄 The Stir: Mix gently with a spatula. Crucial Tip: Stir only until the flour streaks disappear. Overmixing will make the bake tough for a toddler to chew.
2. The Oven Bake (10–30 Mins)
🥧 Spread: Pour the batter into the lined pan. Spread it out to the edges until it is roughly 1cm thick.
🫐 Topping: Scatter the Berries evenly across the top. Press them down slightly with your fingers.
⏲️ Bake: Place in the center of the oven for 18–20 Minutes. The center should feel springy, and the edges should be a very pale gold.
🛑 Finish: Turn the oven Off. Lift the parchment paper to move the whole sheet onto a cutting board.
3. Slice & Store
🔪 Portion: Once fully cooled, slice into "toddler fingers" (rectangles) or small squares.
❄️ Freeze: Place slices in a single layer in a freezer bag.
🛡️ PEDIATRIC SAFETY FIRST
♨️ The Reheating Secret: To keep these soft, do not use a toaster. Place the slice in a Small frying pan with 1 teaspoon of water. Cover with a Lid for 1 minute on low heat. The steam will re-hydrate the brown rice flour, making it soft and moist for your toddler.
🍓 Berry Safety: For toddlers under 18 months, ensure large blueberries are slightly flattened or halved before baking to remove any round choking hazards.
🦷 Texture Check: Brown rice flour can sometimes be "gritty." If your toddler is very picky, let the batter sit in the bowl for 5 minutes before baking; this allows the flour to fully hydrate and soften.
