π THE INGREDIENTS
π Ripe Banana 1 large (or 1/2 cup Unsweetened Applesauce for a milder flavor)
π₯ Creamy Peanut Butter 1/2 cup (Halal, unsalted, and "drippy" style)
π¦ Vanilla Extract 1 teaspoon (Alcohol-free/Halal)
π₯₯ Unsweetened Shredded Coconut 1/2 cup
π₯₯ Coconut Flour 3 tablespoons (Absorbs moisture for a soft set)
πΊ Coconut Oil 1 teaspoon (only if your peanut butter is very thick)
π¨βπ³ THE METHOD
1. The Dough Prep (0β10 Mins)
π₯ Preheat: Turn your oven to 175Β°C (350Β°F).
π Mash: In your Mixing bowl, mash the Banana until it becomes a smooth, liquid consistency.
π₯ Blend: Add the Peanut Butter and Vanilla. Stir with your fork until completely combined.
π₯₯ Dry Mix: Fold in the Shredded Coconut and Coconut Flour.
β³ The Rest: Let the dough sit for 5 Minutes. Coconut flour acts like a sponge; it needs a moment to soak up the liquid to create that soft, cookie-like texture.
Note: If your peanut butter was very "runny," place the bowl in the fridge for 10 minutes during this step.
2. Shaping & Baking (10β25 Mins)
π₯§ Line: Cover your Baking sheet with Parchment paper.
π₯ Scoop: Take 1 level teaspoon of dough and roll it into a small ball (about the size of a large marble).
π΄ Flatten: Place on the tray and use your fork to gently press down, making a "criss-cross" pattern. This makes the cookie thinner and easier for a toddler to bite.
β²οΈ Bake: Place in the oven for 10β12 Minutes.
π The Soft Set: Turn the oven Off. The cookies will look very soft and fragileβthis is normal! They need to cool completely on the tray to firm up into their "soft-bite" texture.
3. Safe Storage
βοΈ Fridge/Freezer: Because these contain fresh fruit and no preservatives, they should not sit on the counter. Store in an airtight container in the Fridge for 3 days or the Freezer for up to 2 months.
